The formula

1 kg vegetables : 500 ml vinegar : 20 g salt

Scale by vegetable weight. For true lacto-ferment (live culture): omit vinegar, use 20-25 g salt per kg, ferment 3-7 days until pH 3.8-4.2. For the hybrid version (quick-pickle with brief ferment): add vinegar after 24-48 h salting, then refrigerate. At room temperature (18-24°C), ferment 3-5 days until desired sourness; refrigerate to halt. Viability: 4-6 weeks refrigerated.
