French meringue

Meringue française · A foam of whipped egg whites with mechanically incorporated sugar, neither cooked nor stabilized with heat. The most elementary and versatile of the three classical meringues. Because the proteins are not coagulated by heat during formation, it is typically used in baked applications where the oven completes the structure, or folded into batters and doughs.

The formula

100 g egg white : 60–100 g caster sugar

The ratio governs texture. 60 g sugar yields a soft, billowy foam for folding into batter; 100 g sugar yields a stiff, dry meringue suitable for piping and baking. All sugar dissolves in the liquid phase of the beaten whites; no heat is used to stabilize the foam.

Identity

  • Two ingredients only: egg whites and refined white sugar — nothing else is essential
  • Egg whites are beaten to a target stage (soft, firm, or stiff peak) before any sugar is added, then the sugar is incorporated gradually
  • Not heated during preparation; the proteins remain uncoagulated and the structure depends entirely on mechanical foam formation

Ingredients

Method

  1. 1Separate eggs cleanly; ensure whites are at room temperature (20–22 °C) and free of any yolk, fat, or residue.Fat (even a trace of yolk) denatures the proteins and prevents the foam from forming. Cold whites are denser and whip more slowly; room temperature whites whip to greater volume.
  2. 2Whisk the egg whites on medium speed, gradually increasing to medium-high, until they reach soft peak — the whites cling to the whisk and curl over, but the bowl can be tilted.At soft peak, the protein films are partially denatured and aligned around air cells. Adding sugar too early (before any foam is established) dilutes the protein concentration and reduces total volume.
  3. 3With the mixer running, add the caster sugar in a slow, steady stream. If using cream of tartar, add it at the start of whisking.Gradual incorporation allows each increment of sugar to dissolve fully in the liquid phase before the next is added. Rapid addition causes the sugar to clump and remain undissolved, which later manifests as grit or weeping.
  4. 4Continue whisking to the desired stage — firm peak (bowl can be inverted without the foam falling, but the peak bends over) for folding into batter, or stiff peak (rigid, vertical points with no flex) for piping and dry applications.The degree of protein alignment and foam density determines the final texture. Techniques that matter

Foam formation (protein film mechanics)

Egg white proteins (mainly ovalbumin, conalbumin, and ovomucoid) unfold at the air-water interface of the incorporated bubbles and form a viscoelastic film. Mechanical whisking drives air incorporation; the proteins' amphiphilic nature allows them to stabilize the interface.

Sugar dissolution and weeping prevention

Sugar added after foam formation dissolves in the remaining liquid between air cells, increasing viscosity and preventing bubble coalescence. If not fully dissolved, the sugar recrystallizes during baking, drawing liquid out (weeping).

Overrun control

The volume increase (overrun) depends on whip time, speed, and sugar timing. Adding sugar earlier yields a denser, more stable foam with less overrun; later sugar yields a lighter, more fragile foam with higher overrun.

Variations & derivatives

Coconut meringueFrance / Pacific

Add 30 g toasted desiccated coconut per 100 g meringue after the stiff peak stage. Used as a topping for coconut cream pie.

Pavlova baseAustralia / New Zealand

A thick, soft-peak meringue shaped into a disc and baked low (100 °C, 90 minutes) to form a crisp shell with a marshmallow interior. Typically flavored with vinegar and cornstarch.

Genoise-leavened meringueFrance

Fold a small quantity of French meringue into a genoise batter (≈25 % of the total batter) to add lift and create a particularly tender crumb, as in fraisier cake layers.

Troubleshooting

Meringue weeps (liquid beads on the surface after baking)

Sugar not fully dissolved before baking, or oven temperature too high causing steam to condense inside the structureEnsure all sugar is incorporated and dissolved before using or baking. Bake at 90–100 °C, not above 120 °C. Cool gradually in the oven with the door ajar.

Foam will not reach stiff peaks; remains flat and liquid

Fat contamination (yolk residue, greasy bowl, or non-plastic utensil), or eggs too old with degraded proteinsUse a scrupulously clean glass or stainless bowl. Wipe with a halved lemon or white vinegar, then dry. Ensure no yolk breached the whites. Use room-temperature, clean whites.
