Fuzhou red rice wine
福州红酒 · A traditional fermented rice wine from the Fuzhou (Foochow) region of Fujian Province, brewed from glutinous rice and red yeast rice (hongqu) inoculated with Monascus purpureus. The single fermentation produces three integrated outputs: an aged sipping wine, a younger cooking wine, and a jar of red wine lees (hong zao / 红糟) used as a signature condiment in Foochow cuisine. Sweet, fruity, and ruby-red, it is the defining liquid of Foochow culinary identity both in Fujian and across the diaspora in Malaysia, Singapore, and Sarawak.

The formula
10 lb glutinous rice : 14 oz red yeast rice : 20 cups distilled water
Plus ~1 small cake (≈6 g) wine yeast activated in ¼ cup cooled boiled water; some Fuzhou households (e.g. Marina's) use ~15% red yeast rice by rice weight instead of ~8.75% — adjust for deeper color and stronger funk.
Identity
- Originates from Fuzhou/Foochow in Fujian Province and carried throughout the Foochow diaspora (Sibu/Sarawak, Sitiawan, Singapore).
- Distinguished from generic huangjiu by its deep red hue and fruity sweetness imparted by Monascus purpureus via red yeast rice (hongqu).
- A single fermentation produces three products in one batch: aged sipping wine, everyday cooking wine, and red wine lees (hong zao).
- The fermentation is impurity-intolerant — 'mess up and all you'll get is vinegar' (Source [1]).

Method
- 1Soak glutinous rice 4–6 hours, then steam until each grain is fully translucent and cooked through; spread on clean trays and cool overnight to room temperature.Yeast and mold are heat-labile; any residual warmth in the rice will kill the culture and stall fermentation.

- 3Layer cooled rice and red yeast rice in a clean wide-mouth ceramic or glass jar, pour over the remaining cooled water plus the activated yeast slurry, and stir gently.Even distribution of mold and yeast is critical; layering ensures the culture penetrates the rice mass.

Techniques that matter
Obsessive sanitation
The fermentation is dominated by sensitive Monascus and Saccharomyces; wild Acetobacter and mold from dirty tools will outcompete them and produce vinegar (Sources [1], [5]).
Overnight cooling of cooked rice
Rice straight from the steamer (~80 °C) will denature yeast proteins; even 40 °C rice noticeably reduces ferment vigor.
Loose-sealed fermentation
CO₂ must vent or pressure can crack glass jars; fully airtight seals also risk anaerobic spoilage organisms.
Layered inoculation
Distributing red yeast rice and yeast slurry through the rice matrix prevents pockets of unfermented, sugar-rich rice that can harbor contaminants.

Troubleshooting
Final wine tastes sharp and vinegary
Contamination with Acetobacter from dirty utensils, hands, or chlorinated water. → Discard; restart with sterilized equipment, distilled water, and tighter hygiene. The vinegar itself can be kept for cooking.
No fermentation activity after 3–5 days
Rice was added while still warm, yeast was dead/old, or culture ratios were wrong. → Pitch fresh activated yeast only after rice is fully cool; verify wine yeast cake is within its expiration and stored dry.
Black or green fuzzy mold on surface
Contamination from airborne spores or loose cover. → Skim and discard the top 2–3 cm; if the wine underneath smells clean, continue — otherwise discard the batch.
Wine is overly sour / thin / lacking red color
Too little red yeast rice, too short fermentation, or fermentation temperature too cool. → Increase red yeast rice ratio toward 15% by rice weight next batch; ferment in a warmer (25–28 °C) spot; age longer in bottle.
