Garlic Oil

Huile à l'ail · A flavored fat made by infusing fresh garlic in a neutral, high‑smoke‑point oil. The infusion delivers concentrated garlic flavor—its sulfur‑volatiles (diallyl disulfide, allicin breakdown products)—without texture or the sharp, raw‑allium bite. In classical European cooking it is the aromatic fat that anchors pasta aglio e olio, aioli emulsions, and finishing sauces. The garlic is never fried to golden; pale golden at most, otherwise it becomes bitter and acrid.

The formula

100 g neutral oil : 10–15 g fresh garlic (10–15 % garlic by weight)

Scale by weight for precision. 10 % yields a subtle background note; 15 % gives assertive garlic punch. Heat garlic in oil at 80–100 °C (just below a simmer) for 10–15 min—never fry to golden.

Method

Garlic Confit in OilProvence / Mediterranean

Garlic cloves are slowly confited in olive oil at 70–80 °C for 30–40 min until completely tender. The garlic becomes spreadable; the oil takes on a deep golden color and sweet, mellow garlic flavor. The confited garlic cloves can be used as a spread or added to sauces.

Pasta Aglio e Olio (as sauce)Central/Southern Italy

The infused oil IS the sauce: cooked with dried pasta water and raw garlic to emulsify slightly and coat the pasta. The oil ratio is higher here because pasta water starch helps bind it.

Chile Garlic OilChina / Sichuan

Dried red chiles and Sichuan peppercorns are briefly fried in the garlic oil base, producing làjiāo yóu. The garlic may or may not be strained out; the result is a spiced finishing oil for cold noodles, dumplings, and Sichuan dishes.

Garlic ButterFrance / universally classical

The equivalent fat‑based garlic preparation using butter instead of oil. Ratio: 100 g butter : 15 g garlic. Butter’s water content limits shelf life severely (3–4 days refrigerated max).

Troubleshooting

Garlic burns or turns deep golden during infusion

Heat is too high. At temperatures above 150 °C the garlic's sugars and amino acids undergo Maillard browning, producing bitter furans and pyrazines.Immediately remove from heat, strain off the oil, and discard the burnt garlic. Start fresh with lower heat. A proper infusion should never exceed 100 °C—use a thermometer or the smallest flame available.

Flavor is weak or barely detectable
