Gundruk
Gundruk · Gundruk is a traditional Himalayan preservation base made by wild-fermenting leafy greens (primarily mustard greens and radish leaves) and then sun-drying them. Method

Troubleshooting
Mold or pink film on the surface of the fermenting greens
Greens were not pressed firmly enough, weight was insufficient, or jar was opened frequently — aerobic spoilage organisms gained access. → Scrape off affected surface layer if it is superficial and re-pack tightly with a clean weight; if the entire batch smells putrid or slimy, discard.
Gundruk finishes with little or no sourness
Ambient temperature was too cool, fermentation was too short, or the greens were not bruised enough to release sugars for LAB. → Extend ferment 2–3 more days at warmer room temperature, or pound/bruise greens more thoroughly before packing next time.
Dried gundruk re-molds in storage

Off, fecal, or rotten aromas during fermentation
