Hákarl cure
Kæstur hákarl · A traditional Icelandic two-stage cold-fermentation and air-drying cure applied to Greenland shark (Somniosus microcephalus) meat. Pieces are buried under gravel to drain urea- and trimethylamine-N-oxide (TMAO)-laden fluids through cold putrefaction, then hung in a ventilated drying shed for several months to firm, develop flavor, and render the otherwise toxic flesh edible.

Method
- 1Behead and gut the Greenland shark; remove the head and entrails where toxin concentrations are highest.Organs concentrate urea and TMAO; gutting reduces the toxic load before curing and prevents internal spoilage.
- 2Cut the carcass into manageable body sections and strips.Smaller, more uniform pieces drain evenly and pack compactly under the gravel press.
- 3Bury the pieces in a shallow pit of porous, gravelly sand and cover with stones that apply steady downward pressure.Pressure expels urea- and TMAO-laden fluid from the flesh while the porous gravel wicks it away — a cold putrefaction that chemically converts the toxins.
- 4Leave the shark buried under the weighted gravel for roughly 6–12 weeks (older methods) to 3–5 months (some modern accounts).Duration is judged by feel and smell; the fermentation is complete when the flesh has lost its raw, urea-saturated character.
- 5Excavate the shark, brush off sand and gravel, and portion it into the two traditional cuts: skyrbitur (small belly cubes) and hvammstungur (larger body strips).Belly and body differ in fat content and texture and are traditionally dried and served separately.

Uses cool Icelandic ground temperatures, microbial enzymatic activity, and steady pressure to drain and break down urea/TMAO without heat.
Long, low-humidity air-drying
Reduces water activity to a level that stabilizes the cured shark and lets residual volatile amines dissipate.

Troubleshooting
Cured shark still tastes sharply of urine or causes tingling/burning
Insufficient burial time or inadequate gravel pressure — urea/TMAO not fully expelled → Re-bury under weighted gravel for additional weeks and re-dry.
Flesh remains soft, wet, or weepy after drying
Drying shed too humid or drying time too short → Extend air-drying in a cooler, better-ventilated space until the surface is firm and leathery.
Surface mold develops during drying
Airflow too low or humidity too high in the drying shed → Increase ventilation; trim light surface mold, discard if extensive.
Ammonia odor remains overwhelming even after drying
Either under-cured or over-cured with high residual amines → Extend drying further in moving air; favor the milder hvammstungur cuts over the belly cubes.
