Herb Salt
Sel aux herbes · A finishing condiment consisting of coarse salt crystals with fresh or dried herbs adhered to their surfaces through gentle mechanical working and controlled drying. Unlike commercial seasoned salts (which are dry blends with anti-caking agents), herb salt preserves fresh herb brightness and delivers both seasoning and aromatic garnish in a single application. The salt acts as both a carrier and a desiccant, drawing moisture from fresh herbs while binding their essential oils and cell matter to each crystal. Used exclusively as a finishing element—added after cooking—to provide herbaceous aroma, textural contrast, and seasoning precision to dishes.

The formula
2¼ parts salt : 1 part fresh herb leaves by weight
This ratio yields approximately 70% salt and 30% fresh herbs by weight. For dried herbs, use 10–15% of the fresh herb weight (approximately 1 part dried herb to 7–10 parts salt). The herb portion is measured after stripping leaves from stems; discard all stems. Use a coarse, flaky sea salt (Maldon, fleur de sel, or sel gris) to maximize surface area for herb adhesion.

Method

- 2Strip fresh herb leaves from stems, discarding stems entirely. Measure leaves precisely by weight. - 3Add herbs (and optional citrus zest or garlic if using) to warm salt. Work together with hands or a wooden spoon until herbs are thoroughly broken down and evenly distributed, coating every crystal.Mechanical action ruptures herb cell walls, releasing internal moisture that bonds with salt and essential oils that coat crystal surfaces. The goal is complete visual homogeneity.
- 4Spread mixture in a thin, even layer on a sheet pan lined with parchment paper. Allow to air-dry at room temperature for 12–24 hours, or dry in a dehydrator at 35–40°C (95–105°F) for 4–6 hours.Air-drying at room temperature best preserves volatile aromatic compounds (linalool, thymol, rosmarinic acid). Oven heat above 50°C destroys heat-labile aromatics. The salt draws moisture from the herbs during this period.
- 5Once completely dry and herbs are firmly adhered, transfer to an airtight glass jar. If any moisture or clumping remains, return to drying.Any residual moisture will cause mold growth during storage. Glass is preferred over plastic as it is non-reactive and provides a moisture barrier.

Moisture equilibration
Salt's hygroscopic nature draws water from herb cells through osmosis, creating a bond between salt crystals and herb matter while simultaneously preserving the preparation through lowered water activity.
Surface area maximization
Flaky or pyramidal salt crystals provide extensive external surface area for herb adhesion. Fine salt lacks this structure and results in a mere dry blend, not a true compound.
Controlled desiccation
Gentle drying preserves volatile aromatics (terpenes, aldehydes, esters) that would evaporate at higher temperatures. The goal is moisture removal without essential oil volatilization.

Sel aux herbes de ProvenceProvence, France
Classic combination: thyme, rosemary, lavender, savory, and sometimes fennel fronds. Traditionally made with fleur de sel. Represented the aromatic backbone of Provençal cuisine.
Shiso Salt (Perilla kosho so)Japan
Fresh shiso leaves worked into coarse salt, dried, and ground. Used as a finishing element for sashimi, pickles, and rice dishes. Red shiso varieties produce a striking purple salt.

Troubleshooting
Herbs fail to adhere and fall off salt crystals during drying
Salt was not warm enough when herbs were added, or herbs were too wet from recent washing without adequate drying time. → Warm salt until a crystal softens slightly when rubbed (barely warm to touch, not hot). Pat herbs dry with towels and allow 30 minutes of air-drying before incorporating.
Mold appears after 1–2 weeks of storage
Insufficient initial drying; moisture remained in the preparation. Often caused by using overly moist soft herbs (basil, chives) without extended drying. → Spread affected salt thinly and dry at 40°C (105°F) for 4–6 hours. If mold has penetrated deeply, discard. Prevent by ensuring complete dryness before initial storage.
Weak or absent herb flavor when used
Herb ratio too low (below 20% by weight), or stale herbs that have already lost volatile compounds through oxidation. → Use fresh, vibrant herbs at minimum 30% of total weight. Check freshness by crushing: fresh herbs should release immediate aroma. Increase herb percentage for more assertive applications.
Salt crystals clump in humid environments
Insufficiently sealed container, or herbs retained more moisture than realized. Himalayan or pink salts are particularly hygroscopic. → Store in airtight glass jars. Add a silica packet inside the container for humid climates. Briefly spread in a warm dry pan before use to restore free-flowing texture.
