Method

Troubleshooting
Visible mold growth on the pack
Insufficient anaerobic seal or over-wet leaves → Discard moldy top layer, re-pack remaining leaves more tightly, and shorten initial wilting.
Soft, putrid, or rotten texture
Too much free water or ferment run too long → Use drier leaves, drain any liquid, and shorten fermentation to 7–10 days.
Weak or flat flavor
Under-fermentation or cold ambient temperature → Extend SSF by 2–4 days in a warmer spot, or backslop from an active batch.
Bitter or medicinal off-notes
