လက်ဖက် · Lahpet is a foundational Burmese fermented tea-leaf preparation produced by steam-blanching tender young shoots of Camellia and packing them under anaerobic conditions for an extended lactic fermentation. It functions as a reusable condiment base, not as a stand-alone dish, providing a tangy, earthy, slightly bitter element to Burmese salads and cooked preparations.

The formula

Salt is the only seasoning added during base fermentation; oil and aromatics are joined later when the lahpet is dressed for a finished dish.

Method
- 1Hand-pluck the tender, young tea shoots and buds.Young shoots carry the right balance of moisture, sugars, and polyphenols to ferment cleanly; mature leaves turn out coarse and excessively bitter.
- 2Steam-blanch the leaves for about five minutes to wilt them and deactivate native enzymes.Steam softens cell walls, removes grassy notes, and gives lactic bacteria a head start — without leaching polyphenols the way boiling water would.
- 3Cool the wilted leaves and layer them with salt in an airtight vessel, pressing firmly to expel trapped air.Compaction under salt creates an anaerobic, high-osmotic environment that favors lactic bacteria and suppresses spoilage molds.

Troubleshooting
Surface mold or pink scum appearing on top
Air pocket above the pressed leaves — the anaerobic seal was incomplete or brine level fell. → Scrape off the affected top layer, repack leaves so they sit fully below the brine surface, and reseal with extra weight.
Leaves still harshly bitter and green after months of holding
Fermentation temperature too cool, or salt level too high to allow microbes to work. → Move the vessel to a warmer ambient spot around 25–30 °C and verify salt is at the lower end of the recommended 3–4 % range.
Soft, mushy texture with sharp vinegar off-flavor
Over-fermentation or co-fermenting yeasts producing excess acetic acid. → Reserve for cooked uses such as lahpet htoat-style curries where strong acidity is welcome rather than serving raw as a salad base.
