լավաշ · Lavash is a thin, flexible, unleavened or lightly leavened flatbread native to the Caucasus and Iran. It is rolled to near-transparency, then baked on the walls of a wood-fired tannur (clay oven) or on a hot sač metal plate. Its defining character is tensile strength combined with pliability — it tears cleanly but bends without cracking, making it the archetypal edible utensil of its culinary regions. As a Foundation, it is the structural template for all Kurdish, Armenian, and Azerbaijani rolled-and-filled preparations, and the wrap against which regional identity is measured.

The formula

100 g flour : 50–55 g water (or yogurt) : 1.5–2 g salt : 0–2 g fat

All ingredients are expressed as percentages of flour weight. Water temperature modulates gluten development: cold water (10–15 °C) for a breadier, more elastic dough; warm water (30–35 °C) for quicker hydration and a softer, more supple sheet. Fat is optional but improves shelf-life and pliability. The dough should hydrate to a stiff but non-sticky consistency — slightly firmer than pasta dough. Final thickness before baking: 1–2 mm (nearly translucent).

Identity

  • Rolled to near-transparency — the sheet should transmit light faintly when held against a light source

Ingredients

Method

  1. 1Combine flour and salt. Drizzle in water (or yogurt) gradually, mixing with a fork or in a stand mixer on low until the dough forms a shaggy, rough mass.Gradual hydration prevents lumpiness and ensures even gluten development. Starting with a rough dough gives flour time to absorb water fully before overworking the gluten.
  2. 2Knead the dough for 8–10 minutes by hand (or 5–6 minutes in a stand mixer with a dough hook) until it is smooth, elastic, and springs back when poked.Full gluten development is the structural foundation of lavash. The dough must reach the windowpane stage — it should stretch thin enough to transmit light without tearing.
  3. 3Divide the dough into equal portions (60–80 g each). Roll each portion into a smooth ball. Cover and rest on a lightly floured surface for 20–30 minutes at room temperature.Resting allows gluten to relax (stress relaxation), making the dough dramatically easier to roll thin without spring-back. It also completes hydration of outer flour layers.
  4. 4On a lightly floured surface, roll each ball to a thin disc, 25–30 cm diameter, 1–2 mm thick — thin enough that the work surface colour shows through faintly.Thickness controls baking outcome. Too thick: bakes dry and cracks when folded. Too thin: becomes brittle. The target is the point just before tearing — a translucent, even sheet.
  5. 5Transfer the sheet to a preheated baking stone, steel, or heavy cast-iron skillet at maximum heat (250–300 °C+). Bake 45–90 seconds per side until blistered, lightly charred in spots, and slightly puffed.Extreme, dry heat causes rapid starch gelatinisation on the surface, creating the characteristic blistered crust. The brief bake time prevents moisture loss, keeping the bread flexible. In a wood-fired tannur, the bread is slapped directly against oven walls.
  6. 6Immediately stack the baked sheets, covering with a clean cloth. The residual steam softens them as they cool.Steam trapped under the cloth keeps the sheets supple and prevents them from becoming brittle as they cool. Stacking while hot allows even steam distribution.

Techniques that matter

Windowpane test

The dough must pass the windowpane test — stretch to a thin, translucent membrane — before rolling. This confirms sufficient gluten development for the extreme thinning required.

High-heat direct baking

Baking at 280+ °C with dry heat (no fat in the pan) causes Maillard and caramelisation reactions on the surface within 60–90 seconds, creating the characteristic char without drying the interior.

Gluten relaxation through rest

A 20–30 minute rest between kneading and final rolling is essential. Rested dough requires less force to roll thin and springs back less, yielding a more uniform, delicate sheet.

Variations & derivatives

Juţka (dzhutka)Kurdish

Thinner and smaller than standard lavash; rolled almost to the point of tearing. Used as an edible spoon for yogurt and stews. Often made with whole-wheat flour.

YufkaTurkish

Practically identical in formulation and method; the name diverges by geography. Turkish yufka is rolled slightly thicker on average and used for layered börek pastries.

MatnakashArmenian

A leavened variant with a deliberately pleated, petal-shaped surface. The leavening gives it a softer, pillowed crumb — it is a different product from true lavash and not interchangeable as a wrap.

SangakIranian

Distinct in that it uses sourdough leavening and is baked on a bed of pebbles. Not a direct substitute, but a related flatbread tradition with different structural properties.

Troubleshooting

Bread tears or cracks when folded around a filling

Insufficient gluten development (under-kneaded) or dough is too dry. Also: baked too long, drying out the interior.Knead to windowpane stage. Ensure hydration is at least 50% of flour weight. Bake no longer than 90 seconds per side at maximum heat. If tearing persists, reduce flour by 5% in the next batch to increase moisture.

Bread is rubbery or chewy rather than supple

Baking temperature too low, causing slow moisture loss and a tough, leathery texture. Or dough was rolled too thick.Increase oven or skillet temperature to the maximum achievable (ideally 280 °C+). Roll to 1–2 mm thickness — translucent. If using a home oven, preheat a baking stone at highest setting for 45 minutes and bake directly on it.

Bread sticks to the work surface and tears when trying to transfer

Insufficient flour on the work surface. Or dough is too hydrated and sticky.Use a light, even dusting of flour. If dough is sticky, add 1–2% more flour at the kneading stage. Use a wide bench scraper or offset spatula to loosen the edges before lifting.

Bread becomes brittle and cracks as it cools

Cooling uncovered without steam. Or over-baking, which drives off all moisture.Stack immediately after baking and cover with a clean cloth. The trapped steam keeps sheets pliable. If already brittle, sprinkle with a few drops of water, wrap in foil, and reheat 2–3 minutes at 150 °C — the steam will restore flexibility.

Storage

Alternatively, hold briefly over a gas burner flame or on a dry hot skillet (30 seconds per side). The steam from the damp cloth revives pliability.
