Macadamia praline paste
Praliné de macadamia · A smooth, spoonable French-style praline paste in which macadamia nuts are enveloped in a dry caramel, cooled, then broken down in a food processor with a splash of cream until the nut oils release and the mixture emulsifies into a glossy, spreadable paste. The cream 'deglaze' is a contemporary addition used specifically with macadamias to soften the set caramel and assist emulsification into a buttery paste.

Method

Substitutions
- Macadamia nuts → Hazelnuts or almonds — Maintain the 1:1 nut-to-sugar ratio; hazelnuts give the most authentic praliné flavor; cream is usually not needed as hazelnut oil releases readily.
- Caster sugar → Granulated sugar — Works but dissolves less uniformly in dry caramel; superfine crystals give a cleaner amber.
- Heavy cream → Whole milk — Produces a thinner, less rich paste but works in a pinch.
Troubleshooting
Paste stays gritty and sandy after long processing
Caramel seized because the nuts were cold when added, or the caramel was cooked too pale to fully dissolve. → Bring nuts to warm (not hot) before adding to caramel, push caramel to true dark amber, and process for an additional 3-5 minutes — patient emulsification usually rescues it.
Paste is too thick/crumbly to flow
Insufficient oil release or too little cream added. → Stream in more warm cream (1 tbsp at a time) and continue processing until a ribbon forms.
Paste is too loose or oily
Over-processed, or nuts were very high in oil (fresh macadamia). → Stir in a tablespoon of confectioners' sugar or cooled, melted white chocolate to tighten the texture.
Caramel turns bitter or burnt
Sugar cooked past deep amber into black caramel territory. → Start over; use a sugar thermometer (target ~170°C / 338°F for dry caramel) and pull the moment the color reaches mahogany.
