nappage · A glossy, semi-fluid fruit glaze applied warm to tarts, pastries, and fresh or poached fruits. Made from reduced fruit preserve, thin syrup, and gelatin, it provides shine, seals moisture, and gives a professional finish to plated desserts.

The formula
preserve : liquid : gelatin = 500g : 100ml : 5 sheets
Scale by surface area: ~150–200g glaze covers one 23cm tart. For candied fruit: 400g fruit needs ~120g glaze. Gelatin = 2g sheet weight; sheets must be bloomed in cold water 10 min before use. Final consistency = warm honey, flows from brush but holds on vertical surfaces.

Ingredients

Method
- 1Combine apricot preserve and water (or syrup) in a saucepan over medium heat, stirring until fully dissolved and fluid.The preserve provides flavor, pectin body, and acidity; liquid thins to a brushable consistency.

Techniques that matter
Blooming gelatin
Hydrating gelatin in cold water before adding to heat prevents graininess and ensures full setting strength. Unblown gelatin dissolves unevenly, giving a rubbery or weak set.
Temperature control
Glaze must be warm when applied but not hot. Above 50 °C gelatin weakens; below 35 °C it sets before it spreads, leaving streaks.
Straining
Removes fruit pulp and seeds that would catch on the brush and ruin the mirror‑smooth finish essential to the classical look.

Nappage rouge (red glaze)France
Made with raspberry, strawberry, or redcurrant preserve. Same method; adds color contrast on red‑fruit tarts or chocolate desserts.
Nappage neutreFrance
Made with apple or white grape jelly base; colorless and low‑flavor, used when the fruit already provides color and sweetness, e.g., on pear tart.
Nappage royalFrance
Adds a small amount of glucose or invert sugar to improve gloss and retard crystallization; common in professional kitchens for long‑held tarts.
Gelatin‑free nappageContemporary
Uses agar‑agar (0.5–1 % by weight) for vegetarians. Agar sets harder and more brittle than gelatin; applied cooler and sets faster, limiting working time.

Substitutions
- apricot jam → quince paste or redcurrant jelly — Quince gives intense floral sweetness; redcurrant adds tart edge. Both have high pectin and work identically.
- gelatin sheets → powdered gelatin (4 g per 500 g base) — Dissolve powdered gelatin in 2× its weight cold water first. Measure carefully — too much leaves a rubbery skin; too little and the glaze weeps.
- gelatin → agar‑agar — For vegan/gluten‑free. Agar sets at higher temperature and harder; glaze must be applied almost immediately. Not a transparent substitute — result is cloudier.changes result
Troubleshooting
Glaze is too thin and runs off the tart
Insufficient gelatin or applied too hot (gelatin never set properly) → Dissolve 1–2 more gelatin sheets in 1 tbsp warm water and whisk into the glaze. Cool to 40 °C before reapplying.
Glaze sets too fast, leaving streaks
Pastry is cold or glaze temperature dropped below 35 °C before application → Return glaze to bain‑marie at 45 °C. Warm the pastry surface briefly with a heat gun or hold near a warm oven door before brushing.
Glaze weeps (liquid pools) after standing
Too much liquid relative to gelatin; gelatin ratio was mismeasured → Reheat glaze, add 1–2 more bloomed gelatin sheets, simmer to reduce liquid content slightly, and reapply.
Glaze is dull or cloudy after setting
Gelatin was overheated or old gelatin used; glaze was stirred after it began to set → Use fresh gelatin (check expiry). Never reheat nappage more than twice. Cloudiness from agar if that was the substitute.
