noisette
noisette · Beurre noisette (literally 'hazelnut butter') is whole butter, melted and cooked until all its water content evaporates and the milk solids caramelize to a deep amber, releasing an intense toasted-hazelnut aroma. It is a pure finishing fat — no thickener, no stock, no emulsifier — and serves as the direct warm coating for proteins and vegetables and as the base for several classical compound butters. The transformation is purely thermal: butter's ~18 % water must first fully evaporate before the isolated milk solids reach the Maillard–caramelization threshold (~150–165 °C), generating pyrazines, furans, and furanones entirely absent from melted or clarified butter.

The formula
100 g whole butter : ~82 g noisette (+ optional 1–3 drops lemon juice, pinch of fleur de sel)
No added fat or liquid. Water (~18 % of whole butter) must fully evaporate before browning begins. The ~82 % yield reflects water loss and minor spattering; clarified butter (water only removed) yields ~80–82 % of input.

Method
- 1Place whole butter (cut into pieces for even melting) in a light-colored saucepan or skillet over medium-low heat. Swirl gently until fully melted.A light-colored pan allows accurate monitoring of color changes. Medium-low heat gives the water time to escape before the milk solids reach browning temperature.
- 2Continue heating. The butter will foam, then the foam will subside as all water content boils off (~3–5 min depending on volume). You will hear a distinct cessation of simmering — the butter is now 'dry.'The foam is steam from the water in butter. When it stops, the milk solids are isolated in dry fat and approaching browning temperature. This is the critical cue: browning is imminent.
- 3Watch the milk solids carefully — they will settle, then gradually turn from white to golden to hazelnut amber. Smell continuously. The instant the butter smells intensely hazelnut and looks deep amber (not dark brown), remove from heat immediately.The transition from hazelnut amber to burnt takes under 30 seconds at medium heat. Noisette's key aroma compounds peak at amber; carry-over heat will push it into bitterness.
- 4If using, add lemon juice and salt off-heat — it will hiss and splatter briefly. Noisette is served warm as a final coating on a finished protein or vegetable. It is not held, reheated aggressively, or stabilized — it relies on its fluidity and fresh aroma. It must be made à la minute.

Troubleshooting
Butter burns — turns black and smells acrid and bitter
Heat too high; browning stage not monitored; pan too dark to judge color accurately; overcooked during carry-over → Use medium-low heat. Remove from heat the instant color reaches hazelnut amber. Pour into a cool vessel or briefly swirl pan in cold water to arrest cooking instantly. Discard and restart — burned butter cannot be salvaged.
Butter seized or curdled when acid was added
Acid added directly to extremely hot butter caused rapid steam explosion and temperature differential too extreme; or acid was too cold → Add acid off-heat, or use room-temperature acid in small additions. A brief sizzle is expected; splitting indicates acid was too cold or butter too hot.
No browning occurs — butter stays pale even after water evaporates
Using clarified butter or very low-fat butter (insufficient or absent milk solids); or heat insufficient to reach browning temperature → Confirm butter contains milk solids (whole, unclarified). Use medium heat. If butter begins to smoke but not brown, temperature is too high — reduce immediately.
Noisette loses aroma and becomes greasy after holding
Reheated too aggressively; milk solids settled; butterfat oxidized during extended hot holding → Make noisette à la minute — within minutes of service. If holding is unavoidable, keep warm in a heatproof container over the lowest possible heat (bain-marie) for no more than 20–30 minutes. Do not refrigerate and reheat.
