Salmon Cure Brine · A wet (liquid) curing brine used throughout the Pacific Northwest to cure salmon fillets before hot or cold smoking. It balances kosher salt and brown sugar in cool water to season, partially preserve, and sweeten the flesh, producing the salty-sweet flavor profile characteristic of British Columbia and Alaska smoked salmon, including the regional specialty known as Salmon Candy / Indian Candy.

The formula

Sugar-to-salt weight ratio is roughly 3:1 by volume; brine should fully dissolve, chill to ≤40°F, and be strong enough to float an egg (or match ~6% salinity by weight for safety). Reusable component — not consumed directly.

Troubleshooting
Cured fish tastes overly salty or harsh
Over-brining, brine too concentrated, or fish pieces too thin → Reduce brine time; rinse fillet longer under cold water before drying; lower salt by ~25% next batch.
Flesh is mushy or chalky after smoking
Wrong salt type (iodized), over-cured, or brine temperature too warm → Switch to kosher or non-iodized sea salt; chill brine fully; cut cure time by 25%.
