panada
panade · A classical thickening paste made from stale bread soaked in cold liquid and cooked with butter, used to body and bind sauces, soups, and stuffings. One of the oldest European thickening agents, predating the roux.

The formula
250 g bread : 60 g butter : 1 L liquid (≈ 4 : 1 : 16 by weight)
Scale by feel: bread should form a pliable, not soupy, paste. Thicker panadas use less liquid; thinner ones more. No flour beyond the bread's own gluten structure.

Method
- 1Tear or cube stale bread, place in a cold saucepan. Cover completely with cold liquid. Soak 30–60 minutes, occasionally pressing gently.Cold liquid hydrates the interior of bread evenly. Hot liquid gelatinizes surface starch first, creating a skin that blocks internal absorption.

Staling redistributes moisture to bread interiors and partially crystallizes amylopectin, allowing faster and more even rehydration than fresh bread, which tends to gum.

Troubleshooting
Paste is sticky or clumpy
Fresh bread used instead of stale, or insufficient cooking time — starch not fully gelatinized or unevenly hydrated → Start over with properly staled bread (1–2 days at room temperature, or dry in a low oven). Extend cooking time, stirring more frequently, until paste is smooth and pulls from pan.
Panada is too dry and crumbly
Too little liquid during soaking, or too much cooking after butter addition → Soak bread in cold liquid until fully hydrated and spongy before adding butter. If already overcooked, add small amounts of warm liquid and work to desired consistency.
Lumps persist after sieving
Bread was cubed too large or not soaked long enough; surface gelatinized before interior hydrated → Tear bread into smaller pieces for next batch. Ensure soaking time is sufficient — bread should feel uniformly soft throughout before heat is applied.
Panada separates or weeps in finished sauce
Insufficient incorporation into base liquid, or base liquid was too hot when panada added → Bring panada and base liquid to similar temperatures before combining. Whisk vigorously and add panada gradually, allowing each portion to fully incorporate before adding more.
