Pekmez (grape-must reduction)

Pekmez · Pekmez is a thick, dark, sugar-rich syrup made by slowly simmering fresh grape must (unfermented pressed grape juice) until it reduces to roughly one-third of its original volume. A pinch of wood ash or a small amount of clay is traditionally added during cooking to neutralize natural acids, prevent caramelization of the sugars from turning bitter, and clarify the syrup.
