Pomegranate Molasses
دبس الرمان · A deeply concentrated, sour‑sweet syrup produced by reducing pomegranate juice—alone or with sugar—to a viscous, intensely flavored liquid. A foundational souring agent and glaze in Middle Eastern, Persian, and Levantine cooking, prized for delivering acidity, subtle sweetness, and a striking ruby colour in a single component.

The formula
3 parts juice : 1 part sugar (by weight) → reduce to ~1 part syrup
Classic commercial ratio uses 3:1 juice:sugar by weight, reduced until the syrup reads ~30°Bx and coats a spoon. Unsweetened versions reduce pure juice to roughly 45–50 % of original volume. Both methods yield a pourable, intensely sour‑sweet syrup at roughly 1.18–1.22 g/mL density.
Identity
- Must taste intensely sour and fruity before it tastes sweet — if it tastes sweet first, the reduction is incomplete
- Must coat a spoon with a slow, even film; it should not be pourable like water
- Colour must be deep brick‑red to almost black‑violet, never bright cherry‑red (under‑reduced)
- Must be free of any caramelised or burnt notes unless intentionally caramelised in a variation
- Contains no thickening agents — viscosity comes solely from reduced fruit solids and pectin

Method

Gentle simmering preserves volatile aromatic esters and anthocyanins that would otherwise be driven off.

Techniques that matter
Reduction
Evaporation concentrates solutes (sugars, acids, pectins, anthocyanin pigments) in a predictable, controllable way. The 3:1 ratio ensures sufficient water remains to keep the syrup pourable while achieving the target 30°Bx concentration.
Inversion (of sucrose)
If sugar is added, the acidic pomegranate juice (pH ≈ 2.5–3.5) inverts sucrose into glucose and fructose during cooking. Inverted sugar resists crystallization and contributes to the syrup’s smooth, glossy texture.
Maillard reaction and caramelisation
When sugar is present, mild browning occurs at the surface during the final stages of reduction, adding depth and complexity beyond pure sweetness. This must be controlled — excessive browning yields bitter notes.

Unsweetened pomegranate molassesIran (rob‑e anar)
Pure sour pomegranate juice reduced without sugar. More acidic, thinner in body, perishable. Must be refrigerated and used within 2–3 weeks. Colour is lighter, more translucent brick‑red.
Sweet pomegranate molassesTurkey (nar ekşisi)
May add extra sugar beyond the 3:1 ratio for a sweeter, more viscous product used in sauces and desserts. Sometimes blended with grape or apple molasses for body.
Caramelised pomegranate molassesLebanon/Syria
Sugar is caramelised separately before adding juice, then the mixture is reduced together. Produces deeper amber‑to‑brown tones and more complex bitter‑sweet notes. Popular for meat glazes.
Spiced pomegranate molassesArmenia, Georgia
Cinnamon sticks, allspice berries, or cloves are added during reduction, then strained out. Used to glaze roasted game meats such as venison or rabbit, and in hearty stews.

Troubleshooting
Syrup crystallises in the bottle or on standing
Over‑reduction drives off too much water, concentrating sucrose beyond its saturation point. Insufficient inversion of sucrose if acid content is low. → Gently reheat the crystallised syrup with 1–2 Tbsp water and a squeeze of lemon juice; stir until redissolved. Store in a smaller container to minimise headspace and moisture absorption.
Burnt or bitter notes in the finished syrup
Cooking at too high a temperature, using a narrow saucepan creating a hot spot at the pan base, or not stirring during the final viscosity stage. → Unfortunately, burnt notes cannot be removed. Discard and restart. Begin with a wider pan, maintain gentle simmering, and stir more frequently as the syrup thickens.
Syrup is thin and watery — doesn’t coat a spoon
Reduction was stopped too early; insufficient evaporation. The juice‑to‑syrup ratio was not reduced enough. → Return to heat and continue reducing, watching closely, until the correct viscosity is achieved. Expect it to thicken further as it cools.
Syrup ferments or sours unexpectedly
Insufficient reduction (water activity too high), inadequate sanitation of bottles, or using juice that was not fully fresh. Natural yeasts remain active. → If fermentation has begun (bubbling, effervescence), the product should be discarded. Ensure proper reduction to ≥30°Bx and use sterilized glass bottles for storage.
