生粉水 (shēng fěn shuǐ) · A cold liquid mixed with potato starch to form a pourable, predispersed thickening agent added to hot liquids in the final stages of cooking. Potato starch gelatinizes at lower temperatures than cornstarch, produces a translucent, glossy finish, and imparts a softer, more yielding body than wheat flour or arrowroot. The slurry prevents lumps by ensuring complete starch hydration before contact with heat.

The formula

1 part potato starch : 1 part cold water (by volume). Thickening power: ~1–2 tbsp slurry per 250 ml of liquid.

The 1:1 ratio by volume gives a pourable, cream-like consistency. For heavier thickening (glazing, coating), reduce water to ½ part. Never add dry starch directly to hot liquid — it clumps immediately.

Method

Starch gelatinization

Potato starch granules swell and burst at 58–68 °C, leaching amylose and forming a translucent gel network. The slurry pre-hydrates granules so gelatinization proceeds evenly rather than forming lumps.

Retrogradation (post-cooking)

Starch gels set firmer when cooled and can weep or become rubbery if held too long. Potato starch retrogrades less than wheat starch but more than modified cornstarch, making it unsuitable for extended hot holding.

Wok-tossing (颠锅)

In Chinese stir-frying, the slurry is added as ingredients are tossed, coating each piece in a thin, glossy film as it hits the hot wok surface briefly.

Troubleshooting

Lumps or strings in the finished sauce

Dry starch was not fully pre-hydrated, or slurry was added in one pour without stirring, creating local over-concentrationAlways whisk the slurry until completely smooth before adding. Add in a slow, steady stream while stirring constantly. If lumps form, pass the sauce through a fine-mesh strainer immediately.

Sauce goes thin or watery after initially thickening
