potato-starch slurry
生粉水 (shēng fěn shuǐ) · A cold liquid mixed with potato starch to form a pourable, predispersed thickening agent added to hot liquids in the final stages of cooking. Potato starch gelatinizes at lower temperatures than cornstarch, produces a translucent, glossy finish, and imparts a softer, more yielding body than wheat flour or arrowroot. The slurry prevents lumps by ensuring complete starch hydration before contact with heat.

The formula
1 part potato starch : 1 part cold water (by volume). Thickening power: ~1–2 tbsp slurry per 250 ml of liquid.
The 1:1 ratio by volume gives a pourable, cream-like consistency. For heavier thickening (glazing, coating), reduce water to ½ part. Never add dry starch directly to hot liquid — it clumps immediately.

Method
- 1Measure potato starch into a small bowl. Add an equal volume of ice-cold water.Cold water prevents premature gelatinization. Equal volumes give a pourable, lump-free slurry.
- 2Whisk vigorously until the mixture is completely uniform — no white streaks, no settled powder at the bottom.Any dry starch or uneven dispersion will form lumps when introduced to heat. Complete hydration before heat is the entire purpose of the slurry.
- 3Bring the sauce, soup, or braising liquid to a full, active boil. Remove from direct heat.Boiling ensures the liquid temperature exceeds the gelatinization threshold (~65 °C). Off heat or with vigorous stirring prevents over-cooking the starch.
- 4Pour the slurry slowly into the boiling liquid while stirring constantly with a wok ladle or wide spatula (or toss the ingredient to coat in a wok).Constant agitation distributes starch evenly and prevents local over-concentration that causes stringiness or clumping. In a wok, tossing coats ingredients uniformly.
- 5Return briefly to a boil only if the dish requires further cooking; otherwise serve immediately.The starch thickens almost instantaneously. Extended boiling can break the gel, causing thinning or a gluey texture.
Techniques that matter
Starch gelatinization
Potato starch granules swell and burst at 58–68 °C, leaching amylose and forming a translucent gel network. The slurry pre-hydrates granules so gelatinization proceeds evenly rather than forming lumps.
Retrogradation (post-cooking)
Starch gels set firmer when cooled and can weep or become rubbery if held too long. Potato starch retrogrades less than wheat starch but more than modified cornstarch, making it unsuitable for extended hot holding.
Wok-tossing (颠锅)
In Chinese stir-frying, the slurry is added as ingredients are tossed, coating each piece in a thin, glossy film as it hits the hot wok surface briefly.

Troubleshooting
Lumps or strings in the finished sauce
Dry starch was not fully pre-hydrated, or slurry was added in one pour without stirring, creating local over-concentration → Always whisk the slurry until completely smooth before adding. Add in a slow, steady stream while stirring constantly. If lumps form, pass the sauce through a fine-mesh strainer immediately.
Sauce goes thin or watery after initially thickening
Over-cooking after adding starch; the gelatinized network breaks down and amylose leaches out (starch breakdown) → Add slurry at the very end of cooking. Once thickened, do not return to a hard boil. Serve immediately or hold at a gentle simmer only.
Gluey, pasty, or gummy texture
Too much starch added (exceeding ~2–3% starch by total weight of liquid) or insufficient liquid relative to starch → Use 1–2 tbsp slurry per 250 ml as a starting point. If the sauce is already gluey, dilute with more liquid and re-thicken with a small correct amount of fresh slurry.
Sauce weeps or separates when cooled
Retrogradation of potato starch; excess amylose exuding from the gel network as it cools → Serve hot. If holding is necessary, stir before service to re-emulsify. Potato starch is not ideal for dishes that must be held hot for extended periods.
