The formula

The classical formula uses no chemical leavener. A half-teaspoon of baking powder per 454 g of flour is the standard modern concession for domestic ovens, which run hotter and bake faster than the wood-fired ovens the classical pound was designed for. The leavening is otherwise achieved entirely by incorporated air in the creamed butter-sugar paste and by steam from the eggs themselves.

Method

  1. 1Bring butter, eggs, and all equipment to 18–21 °C (room temperature). Preheat oven to 160–165 °C (325 °F) conventional. Butter and flour a 900-g loaf pan or 22-cm savarin ring.Room-temperature ingredients emulsify uniformly. Cold butter cannot cream to incorporate sufficient air. Cool oven (160 °C) is essential: it allows the cake to set slowly before the surface caramelizes, producing an even, level crumb.
  2. 2Cream butter alone in a stand mixer at medium speed for 3–4 minutes until pliable and silky, not yet adding sugar. Add sugar and cream together at medium-high speed for 6–8 minutes until the mixture is very pale, voluminous, and falls from the paddle in a wide, flat ribbon.Creaming is the sole leavening mechanism in the classical version. Creaming method

The creaming of fat and sugar is the defining technique of the pound cake family. It mechanically incorporates air (the only leavener in the classical version) and pre-dissolves sugar in the butter's water phase, both critical for a fine, even crumb.

Emulsification

Whole eggs are an emulsion of water-phase proteins and fat-phase yolk. The creamed butter-sugar paste is also an emulsion. Adding eggs gradually allows these two emulsions to merge without breaking, creating a homogeneous batter where fat and water are uniformly distributed.

Starch gelatinization

Flour starch absorbs water and gelatinizes during baking, providing the structural backbone of the crumb. Too much water (from excessive eggs or butter) dilutes this effect and produces a greasy, heavy crumb; the equal-weight formula maintains the correct balance.

Protein coagulation

Egg and flour proteins denature and set during baking, trapping the air cells created during creaming. The cake's structure is a foam of fat-coated air cells stabilized by a matrix of coagulated protein and gelatinized starch.

Quatre-Quarts

The Breton four-quarters. Equal weight of butter, sugar, eggs, and flour. Served plain, sliced with salted butter, or as the base for kouign-amann-style caramelized variants. May include a tablespoon of rum or Cognac.

Pan di Spagna

The Italian 'Spanish cake.' Equal weights of eggs and sugar whipped with flour (no butter). The leavening comes entirely from whipped egg foams rather than creaming. Crispier crust, drier crumb. Used as the base for zuppa Inglese and tiramisu.

Bizcocho de Libra

The Latin American pound cake. Often includes a small amount of whole milk (to extend the crumb) or a chemical leavener. Flavored with anise, coconut, or tropical fruits. In Puerto Rico, sometimes made with grated yuca.

Coconut Pound Cake

Toasted coconut folded into the batter with coconut milk replacing a portion of the butter. Popular for holidays and church gatherings. Often glazed with a coconut-pecan frosting.

Troubleshooting

Dense, heavy crumb with tunnels

Under-creaming the butter and sugar. Insufficient air incorporation means no leavening in the classical (no-leavener) version. The batter also may have been overmixed after adding flour, developing tough gluten strands.Cream at medium-high speed for the full 6–8 minutes until the ribbon stage. Add flour in two additions and fold, never beat. Ensure oven is at correct temperature — too hot causes a crust to form before the center sets.

Greasy, oily texture on the crumb

The emulsion broke during egg incorporation. Cold eggs added too quickly, or excessive egg relative to butter fat, causes fat to separate from the water phase.Ensure eggs are at room temperature. Add eggs one at a time, allowing each to fully incorporate before the next. If curdling begins, add a tablespoon of flour immediately to restore the emulsion.

Dry, crumbly texture

Overbaking. Pound cake is lean (no additional moisture from milk or yogurt) and dries out rapidly once internal temperature exceeds 96–98 °C. Also caused by excessive flour incorporation during mixing.Test with a skewer at 55 minutes and every 5 minutes thereafter. Remove the moment the skewer emerges clean. Cool completely before slicing. Use a kitchen scale to measure flour by weight, not volume, to avoid excess.

Excessive cracking or splitting

Oven temperature too high, causing the surface to set before the center has fully risen. Also caused by insufficient pan preparation, where the cake stuck and cracked as it rose unevenly.Bake at 160–165 °C (325 °F) conventional. If using convection, reduce by 15–20 °C and expect a shorter bake time. Ensure the pan is properly buttered and floured, or lined with parchment.
