10:1 lemon : salt by weight

Example: 1 kg lemons (≈6–8 whole) : 100 g kosher salt. Pack into a clean 500 mL jar. Ferment 2–4 weeks at room temperature (18–24 °C). Yields roughly 300–400 g preserved rind plus brine.

Method

Enzymatic texturization (pektinase/protease activity)

The albedo contains endogenous enzymes that, over weeks, hydrolyze cell‑wall pectin and denature proteins, converting a firm, bitter pith into a soft, sweet, jelly‑like texture. This is identical in principle to enzymatic meat tenderizers.

Salt‑drawn brine extraction

Salt creates osmotic pressure, drawing cell liquid out of the lemon to create a self‑brining environment without added water — pure flavor concentration.
