ramen noodle
ラーメン · A wheat-flour noodle made with kansui — a solution of alkaline mineral salts — that chemically transforms the dough to produce a bright yellow color, a resilient chewy bite, and extraordinary broth-holding ability. It is the structural and sensory foundation of every bowl of ramen, not merely a vehicle for broth.

The formula
100:33–36:1:1 (flour:water:kansui:salt)
Scales linearly. Example for 4 servings: 500 g bread flour (11–13% protein), 175 ml water, 5 g kansui, 5 g fine salt. Final cooked weight approximately 240–280 g. Adjust water ±2% for humidity and flour absorption; higher protein flour benefits from the higher end of hydration. Salt can rise to 1.5 g for flavor development. Kansui above 2 g produces an overly stiff, bouncy dough; below 0.5 g yields pale, soft noodles lacking character.
Identity
- Must contain kansui (potassium carbonate + sodium carbonate in aqueous solution) — this is the non-negotiable defining ingredient
- Must use high-protein bread flour (minimum 10.5% protein) to develop sufficient gluten for springy, cohesive texture
- Must rest a minimum of 30 minutes (wrapped) after mixing and again after sheeting, to relax gluten and prevent spring and tearing during cutting
- Must be cooked in boiling unsalted water for 60–90 seconds fresh, 2–3 minutes dried, then rinsed only if specified by the ramen style
- Must achieve a smooth, non-sticky, cohesive sheet before resting — raw dough quality is irreversible once cut
Ingredients

Method
- 1Dissolve salt and kansui completely in cold water. Sift flour into a wide mixing bowl or stand-mixer bowl.Kansui must be fully dissolved to distribute evenly — undissolved crystals create localized alkalinity causing uneven color and texture. Cold water keeps the dough tight during initial mixing.
- 2Add liquid to flour in a thin stream while stirring with chopsticks or a fork. Mix until no dry flour remains — a shaggy, crumbly mass forms.Gradual liquid incorporation prevents lumps and ensures even hydration. The crumbly texture at this stage is correct; do not add more water.
- 3Gather into a rough ball. Knead firmly for 5–7 minutes by hand (or 3–4 minutes in a stand mixer with dough hook) until a smooth, elastic, non-sticky dough forms.Full gluten development is essential for the springy, cohesive noodle strand. Under-kneaded dough tears during sheeting and produces mushy-boiled noodles.
- 4Wrap tightly in cling film. Rest at room temperature for a minimum of 30 minutes (ideally 60 minutes).Resting allows gluten to relax, reducing elasticity and memory — without rest, the dough springs back during sheeting and cuts unevenly. It also improves water absorption into the flour.
- 5Sheet the dough through a pasta machine: start at the widest setting (1), reduce to setting 5–7 for thin noodles (1.5–2 mm thickness). Fold and re-roll once at the widest setting if air pockets form. Rest wrapped for 15 minutes between each major reduction.Gradual reduction builds a dense, even gluten matrix. The mid-process rest prevents tearing from spring. Noodle thickness directly controls cooked texture: thinner = more tender, thicker = more chewy.
- 6Cut noodles to desired width using the pasta machine's noodle attachment, or by hand with a sharp knife. Dust generously with potato starch or cornstarch to prevent sticking.Alkaline noodles stick aggressively when cooked — starch coating creates a barrier and adds surface texture that helps broth cling. Width determines eating character: 1.5 mm for thin/delicate; 2.5–3 mm for thick/chewy.
Techniques that matter
Alkalization of wheat protein
Kansui raises dough pH from ~5.5 to ~9–10, fundamentally altering gluten structure — cross-linking increases, elasticity and extensibility change, and the dough becomes more cohesive and heat-stable. This is why ramen noodles retain firm bite even in hot broth.
Gluten relaxation through resting
Two rest periods (post-knead and post-sheeting) allow hydrogen bonds in the gluten network to reconfigure, reducing internal tension. Skipping rest causes the dough to elastically spring back during rolling, producing uneven thickness and noodles that fray during cutting.
Starch coating (sayamato)
Fresh alkaline noodles have a tacky surface that causes them to fuse in the pot. Dusting with potato or tapioca starch before cooking creates a dry, discrete surface. The starch gelatinizes slightly during boiling, giving a faint sheen and helping broth adhere to the noodle strand.
Precise boiling timing
Fresh ramen noodles cook in 60–90 seconds — far less than dried pasta. The alkaline gel structure means overcooking destroys the prized chewiness rapidly. Tasting at 60 seconds and every 10 seconds after is standard practice.
Variations & derivatives
Kurume-style (thin, wavy, firm)Kurume, Fukuoka, Japan
Very thin (1–1.2 mm), wavy strands, high kansui (1.5–2% of flour), low hydration (~30–32%). Extremely chewy, designed to hold rich tonkotsu broth. The standard for authentic Hakata ramen.
Sapporo-style (thick, wavy, rich)Sapporo, Hokkaido, Japan
Thick (2.5–3 mm), wavy, often includes egg for a richer yellow and slightly softer bite. Higher hydration (~35–38%). Designed to stand up to heavy miso tare and large volume of broth.
Tokyo-style (thin, straight, medium firm)Tokyo, Japan
Straight (not wavy), thin (1.5–2 mm), moderate kansui (~1%), medium hydration. The most neutral style, meant to complement clear chicken-and-dashi broths.
Abura-soba / Mazemen noodle (drier, slightly thicker)Japan
Thicker strands (2–2.5 mm) that hold sauce without a broth base. Often slightly lower kansui for a more neutral flavor that doesn't compete with tare.
Frozen ramen noodleJapan (commercial production)
Fresh noodles flash-frozen immediately after cutting. Ice crystal formation weakens gluten slightly, producing an even more tender cooked texture. Must be cooked from frozen — never thaw first.

Substitutions
- kansui (potassium + sodium carbonate solution) → baking soda (sodium bicarbonate, NaHCO₃) — Baking soda alone is insufficient. When heated to 140–150°C during noodle drying, it partially decomposes to sodium carbonate and provides mild alkalization — used in some Chinese-style alkaline noodles. Color and texture are noticeably paler and less developed than true kansui noodles. Use at 2–3% of flour weight if substituting.changes result
- kansui → food-grade lye water (NaOH, ~4% solution) — NaOH is more aggressively alkaline than the potassium/sodium carbonate blend in kansui. It produces a stronger bite and brighter yellow at much lower concentrations (0.4–0.6% of flour weight). Do not exceed 0.7% — the dough becomes too tight and the taste metallic. - bread flour → 00 flour (Italian pasta flour) — 00 flour (Doppio Zero) has ~11% protein and fine granulation — acceptable and used in some commercial ramen production for smoother texture. The coarser granulation of standard bread flour creates slightly more rustic bite.
Troubleshooting
Noodles stick together aggressively in the pot
Insufficient starch coating; noodles were cut too thick and close together; pot not at a full rolling boil → Dust generously with potato starch before cooking. Ensure boiling water is at full turbulence. Cook in batches if the pot is crowded — noodles need room to separate.
Noodles are pale, grayish, or lack characteristic yellow color
Kansui concentration too low; kansui not fully dissolved; old or degraded kansui → Increase kansui to 1.5% of flour weight. Always dissolve completely in water before adding to flour. Replace kansui — it is stable but hygroscopic and degrades in humid storage.
Noodles are mushy or fall apart in broth after 2–3 minutes
Underdeveloped gluten (under-kneaded or under-rested); dough too wet; noodles cut too thick → Knead dough until smooth and elastic. Ensure full rest periods. Reduce water by 2%. Cut thinner. For dried noodles, ensure thorough drying (24–48 hours at room temperature or low oven).
Noodles are too stiff or rubbery — bounces back on the bite
Kansui too high (over-alkalization tightens gluten excessively); noodles undercooked but structure set → Reduce kansui to 0.8–1% of flour. Extend boiling by 10–20 seconds — the alkaline gel needs slightly longer to soften fully. Ensure broth is served at proper temperature.
