Red yeast rice (koji grain)
红曲 · A fermented grain product made by inoculating steamed rice — typically glutinous — with the mold Monascus purpureus, producing ruby-red koji grains used across Chinese and especially Fujianese cuisine as a natural colorant, aromatic ferment, food preservative, and base for rice wines and vinesse. Documented under the entry 'hong qu' in Li Shizhen's 1578 Ben Cao Gang Mu, the technique is traced to Fujian province where it predates the text by 600–900 years.

Method
- 1Soak glutinous rice ~6 hours until grains crush easily between fingers, then drainHydration equalizes cooking and gives Monascus a uniformly accessible starch substrate
- 2Steam the soaked rice ~40 minutes over high heat, loosening and sprinkling water every 15 minutesSteaming (not boiling) keeps grains separate so the mold can colonize each one evenly

Temperature-controlled incubation
Monascus thrives at 28–33°C; deviation either kills the culture or lets competing bacteria dominate
Sanitized, sealed glass fermentation
Airtight seal excludes spoilage molds while trapping anaerobic yeast activity for alcoholic fermentation
Sun-shade curing
Direct sunlight degrades monascorubramine; shaded, ventilated spots preserve the cinnabar color prized in char siu and red-cooked dishes

Troubleshooting
Rice grains fail to redden or fermentation stalls
Rice was too hot (>40°C) when the Monascus was added, killing the culture on contact → Cool rice fully to ~30°C before re-inoculating with a fresh starter
Jar bulges or explodes during incubation
Insufficient headspace for CO₂ generated by active fermentation → Loosen lid daily or fit an airlock; always reserve 1/4 of jar volume as headspace
White, black, or green fuzzy growth appears
Sporulating spoilage molds (Aspergillus, Mucor) from unsterilized equipment → Discard batch and re-sterilize glassware, utensils, and rice before reattempting
Koji turns pale or beige instead of ruby red
Direct sunlight exposure bleaches monascorubramine pigments → Move to a shaded, ventilated, cool spot immediately and cover with opaque cloth
