Troubleshooting

Shallots steam instead of brown, remaining pale and tough

Too much cover time or oven temperature too low. Trapped steam prevents surface drying needed for caramelization.Uncover 5 minutes earlier next time. Ensure oven thermometer is accurate — 190 °C minimum. Do not crowd pan; steam escaping from one piece inhibits browning on neighbors.

Shallots blacken and taste acridly bitter
