The formula
100g roasted flesh : 5–8g olive oil
From whole peppers: 1 kg whole red bell peppers (~4–5 peppers) yields 600–700g roasted flesh. Oil at 5–8% of roasted pepper weight produces a pourable consistency. Salt at 1–1.5% of total weight, added after blending.

Method

Troubleshooting
purée tastes harsh or bitter
Charred skin incompletely removed, seeds or pith left in, or peppers overcooked before charring → Remove every trace of blackened skin. Scoop out all seeds and white membrane. Char over higher heat for shorter duration.
purée is too thin or watery
Peppers under-charred (flesh not concentrated), excessive steaming liquid retained, or using overripe mealy peppers → Drain peppers thoroughly before blending. For watery batches, simmer gently in pan until reduced by 15–20%, or increase oil ratio slightly.
purée lacks smoky depth and complexity
Insufficient char — pale, partial blackening; oven-roasted peppers; or peppers too young (still green-tinged) → Return peppers to direct flame. Char until 95%+ of surface is black. The flavor compounds simply do not exist without complete pyrolysis.
oil separates and pools after storage
Insufficient emulsification, or temperature cycling causes emulsion breakdown → Whisk or blend briefly before each use. Adding a small amount of soy lecithin (1–2% of weight) stabilizes the emulsion.
