Pimientos del Piquillo de Lodosa · Fire-roasted, hand-peeled, and packed Piquillo peppers — a specific small, pointed, sweet pepper variety cultivated primarily in the Ebro valley around Lodosa, Navarra. The foundation is the charred, concentrated, jammy pepper as a vehicle: its smoky depth, soft texture, and bright acidity are the asset. This is not a sauce or a mash — it is an ingredient that retains its shape, its dark rust-red color, and its bittersweet character.

The formula

1 kg fresh → 600 g peeled (60% yield)

One standard 450 g jar contains 10–15 whole peppers, approximately 2–3 peppers per portion as a garnish or 4–6 per portion as a component. Scale by jar count; one 450 g jar serves 2–4 portions depending on use. Charring: 10–15 minutes over high heat until skin is uniformly black.

Method

Removing them selectively controls the flavor balance. Working warm prevents the flesh from becoming rubbery as it cools.

Techniques that matter

Direct flame charring

Maximum surface temperature (400–500 °C) drives rapid caramelization and smoke penetration into the flesh — an effect impossible to replicate with dry or wet heat methods.

Residual steaming (sweating under cover)

The trapped steam cooks the interior flesh while the skin separates from it — a controlled passive heat step that preserves texture without additional moisture.

Hand peeling while warm

Pectin in pepper cell walls is most soluble and the skin most pliable at 50–60 °C; cooling below 40 °C causes pectin to gel and the skin to adhere, making peeling destructive to flesh integrity.

Water bath canning

Classically, peppers are packed hot and sealed — the residual heat creates vacuum as jars cool. A formal water bath adds safety margin for shelf stability beyond two weeks.

Piquillos en conserva (in oil)Basque Country

Packed in extra-virgin olive oil rather than their own juices; the oil carries smoky, fruity compounds and adds richness. Common as a pintxo base.

Piquillos rellenos de anchoaNavarra/Basque

Whole peppers stuffed with a single salt-cured anchovy fillet and a splash of oil. The anchovy umami and saltiness against the sweet-bitter pepper is a foundational flavor balance.

Piquillo piperadePays Basque (French)

The pepper is cooked down with onions, tomatoes, and Espelette pepper — here the piquillo is the base rather than the hero, a rare case of the foundation used as raw material for another foundation.

Piquillo confitadoModern Spanish

Slow-cooked in olive oil at low temperature (80 °C) for 1–2 hours until extremely tender and jammy. Used as a spread, a garnish, or a filling. The confiting replaces the charring step.

Troubleshooting

Peppers are rubbery and dense, not tender

Under-charring or peeling while too cold — the pectin never fully loosened from the cell walls, and residual enzyme activity has made the flesh firm.If jarred: place the peppers on a baking sheet and roast under a very hot broiler (260 °C) for 4–5 minutes, turning once, until skin blisters and flesh softens. Steam under cover 5 minutes, then re-peel and repack. If fresh: char longer and more aggressively over the flame.

Excessive bitterness in the finished pepper

Too much of the placental membrane and seed core was left attached, or the peppers were over-roasted to the point of charring the flesh itself rather than just the skin.Rinse the peeled peppers briefly in warm water to leach surface bitterness, then drain and season with a pinch of sugar to balance. For future batches: remove all seed core and scrape the inner ribs more thoroughly.

Mushy, waterlogged flesh, especially from jars

Peppers were packed too long after peeling, or the packing liquid was diluted; also a sign the peppers were not packed at peak freshness.Drain the peppers and lay them on a wire rack set over a baking sheet; refrigerate uncovered for 2 hours to allow surface moisture to evaporate. Use immediately in applications where texture is less critical (croquetas, revuelto). Discard the packing liquid and replace with a drizzle of good olive oil.

Faded, orange color rather than deep rust-red

Peppers were harvested under-ripe (common in cheaper commercial products) or exposed to light and air in storage, degrading the capsanthin and capsorubin carotenoid pigments.Place the pale peppers in a small saucepan with a tablespoon of their juices; cook over medium-low heat for 5 minutes, stirring gently — the brief cooking will deepen the color slightly through pigment concentration. For future purchase: insist on DOP-labeled products from Navarra; color is a reliable indicator of proper ripeness.

Storage

Keeps 12–18 months sealed in jar; 5–7 days refrigerated after openingStore sealed glass jars in a cool, dark cupboard away from direct light. Once opened, transfer any unused peppers and their liquid to a clean glass container, cover with a thin layer of olive oil if not using within 2 days, and refrigerate. Do not freeze — the high water content of the flesh causes ice crystal formation that destroys texture irreversibly. Reheat: Shallow pan over medium heat with the pepper's own juices for 2–3 minutes until just warm and glistening. Alternatively, drop whole peppers directly into simmering soups, rice dishes, or braises in the last 5–10 minutes of cooking. Do not microwave — uneven heating causes the flesh to steam and become mealy.
