Roasted Tomato Base

Concassé de tomates rôties · A concentrated tomato preparation made by roasting fresh tomatoes until deeply caramelized and charred, then reducing the released juices into a glossy, intensely flavored base. The Maillard reaction and caramelization during high-heat roasting develop a complexity fundamentally different from raw or simmered tomato preparations.

The formula

1000 g whole tomatoes : 30 mL fat : 5 g salt (aromatics optional)

The master ratio by mass is approximately 100:3:0.5 (tomato : fat : salt). Scale by feel: enough fat to coat cut surfaces, enough salt to draw initial moisture and season the final reduction. Aromatics (garlic, thyme) are backdrop — they do not alter the core ratio.

Identity

  • Whole, ripe tomatoes halved and placed cut-side down on a screaming-hot pan to create a dry surface zone for Maillard browning
  • High-heat dry roast (200–220 °C / 400–425 °F) until cut surfaces are mahogany-brown and edges charred — the char is caramelized pectin and sugar, not failure
  • Aromatics applied in the last 20 minutes only — early addition burns sugars and volatile aromatics before the tomato is cooked
  • Collected pan juices (the most intensely flavored component) reduced separately with deglazed fond to a glossy, paint-like consistency
  • No added liquid — the only water is the tomato's own, evaporated and reconcentrated

Ingredients

Baseripe whole tomatoes (Roma, San Marzano, or vine-ripened heirlooms)1 kg standard yield. Roma or San Marzano preferred for lower water content and meatier flesh; heirlooms for deeper flavor at higher moisture cost.
Fathigh-smoke-point olive oil or neutral oil (grapeseed, sunflower)30 mL. Coats cut surfaces, promotes browning and Maillard reaction, prevents sticking. Fat is the heat-transfer medium that enables caramelization on the tomato surface — not optional.
Seasoningkosher salt5 g. Applied in two stages: half before roasting (draws moisture, jumpstarts concentration) and half after reduction (seasoning to taste). Fine salt requires ~25% less.
Aromaticsgarlic cloves, thyme or oregano sprigs2–3 cloves, 2–3 sprigs. Optional but traditional. Added in the last 20 minutes of roasting to avoid burning sugars before the tomato is cooked through.

Method

  1. 1Heat oven to 210 °C (410 °F) with a heavy rimmed baking sheet or roasting pan inside. Halve tomatoes horizontally. Toss cut surfaces gently in oil, salt lightly (half the total), and lay cut-side down on the hot pan in a single layer with 1–2 cm gaps between each.
  2. 2Roast 35–45 minutes until cut surfaces are deeply mahogany-brown and edges are charred. The tomatoes should be shrunken, collapsed, and releasing thick, syrupy juices. If using aromatics, scatter them around the tomatoes in the last 20 minutes.
  3. 3Transfer tomatoes to a bowl. Pour the dark, concentrated juices from the pan into a small saucepan. Scrape the pan fond thoroughly, adding 1–2 tbsp of pan juices to help dissolve it, then add to the saucepan.
  4. 4Simmer the collected juices over medium heat, stirring occasionally, until reduced by one-third to a glossy, paint-like consistency, 5–10 minutes. Season with remaining salt. If tomatoes are very wet, press gently through a sieve to remove excess liquid before final reduction.
  5. 5Roughly chop the roasted tomatoes (or pass through a food mill for a smoother texture). Fold the reduced juices back in. Cool in a wide shallow container to prevent residual heat from continuing to cook.

Uses San Marzano tomatoes, roasted at 190 °C for 60 minutes, with basil added only after roasting. The longer, gentler roast develops a sweeter, less acidic flavor profile characteristic of Roman cooking.

Spanish roasted tomato base (sofrito foundation)Spain

Tomatoes are roasted and then grated against a box grater, discarding skin and seeds, producing a smooth, pourable base used as the foundation of sofrito. Emphasizes texture over caramelization depth.

Blistered cherry tomato baseMediterranean

Whole cherry tomatoes roasted at 230 °C until blistered and split. Higher sugar concentration per gram; used as a pizza or bruschetta topping. More reduction needed due to abundant interior liquid.

Troubleshooting

Base tastes acidic, sharp, or one-dimensional despite long roasting

Tomatoes were underripe or oven temperature was too low, preventing proper caramelization. Low heat drives water off but does not activate Maillard reactions. The result is concentrated acidity, not balanced sweetness.Roast at 200–220 °C. Select fully ripe, fragrant tomatoes. Add 2–3 g sugar before roasting to accelerate caramelization and balance natural acidity.

Base is watery and thin after reduction

Too much interior liquid relative to roasting time, or tomatoes were not roasted long enough to collapse fully. Also occurs when aromatics release moisture into the pan.Extend roasting by 15–20 minutes until tomatoes are deeply shrunken and interiors are visibly jammy. If still thin, press gently through a sieve and reduce the collected liquid further.

Burnt, acrid, bitter base with no tomato character

Aromatics (especially garlic) were added at the start of roasting and burned to carbon before the tomatoes cooked. Carbonized compounds mask the tomato's flavor entirely.Add garlic and herbs only in the final 20 minutes. If already burnt, discard and start over — there is no fix for a carbonized base.

Storage

Keeps 7–10 days refrigerated in an airtight container; 3 months frozenRefrigerate in a sealed jar with a thin layer of olive oil floated on top to create an airlock seal. Freeze in ice cube trays for convenient portioning. Do not refrigerate uncovered — the roasted sugars absorb off-flavors from other foods. Reheat: Warm gently in a small saucepan over medium-low heat, stirring, or microwave 30–45 seconds. If frozen, thaw overnight in the refrigerator or add frozen directly to simmering liquid in a braise.
