Rugsurdej
Rugsurdej · A living, perpetually refreshed culture of rye flour and water, fermented by ambient wild yeast (Saccharomyces spp.) and lactic- and acetic-acid bacteria (Lactobacillaceae). In Danish baking it functions as the reusable leavening and flavor-generating foundation for rugbrød.

The formula
1:1 rye flour : water (by weight)
Per Skærtoft, a routine refresh is 70 g rye flour + 70 g water (or 50 g existing starter + 70 g flour + 70 g water). Per The Rye Baker, the sour sponge holds ≥50% of total dough flour and ripens ~24 h at room temperature.

Method
- 1Combine equal weights of rye flour and water in a non-reactive vessel (or seed with 50 g existing starter + 70 g water + 70 g rye flour).Establishes 1:1 hydration and brings rye-resident enzymes and microbes into contact with water to begin acidification.
- 2Stir to a smooth, lump-free batter; cover loosely; rest at room temperature (~20–22 °C) for ~8–12 h.Allows rye amylases to release fermentable sugars while lactobacilli drop pH, suppressing spoilage organisms.
- 3Discard half and refresh with a fresh 1:1 weight of rye flour and water once every 8–12 h — daily for the first 3 days if converting from a wheat starter, then once daily thereafter.Repeated 1:1 refreshments select for rye-adapted microflora and keep the culture active and balanced.
- 4Refresh one last time ≥4 h (or 8–12 h) before mixing the rugbrød; build the preferment sponge so it carries ≥50% of the dough's total flour and ripens ~24 h.Ripens the culture to peak activity so its acid and CO₂ can both leaven and flavor the dense rye dough.

Substitutions
- hvedesurdej (wheat sourdough) → Rugsurdej (rye sourdough) — A wheat sour will leaven rye dough, but the flavor and crumb will be less traditionally sour; rye-train it on rye flour for ≥3 days for best results.

Troubleshooting
Pink, orange or black film on the surface
Contamination from an uncovered vessel or prolonged neglect between refreshes → Discard, sterilize the jar, and restart from a healthy seed or from scratch.
Thin hooch layer and sharp vinegar aroma
Starvation — too long between refreshes → Discard half and refresh immediately with fresh 1:1 flour and water.
Slow, weak rise of the rugbrød sponge
Too-cool room, chlorinated water, or insufficient refresh lead time → Move the jar to a warmer spot (22–26 °C), use unchlorinated water, and refresh at least 8–12 h before mixing the dough.
Excessively bitter finished loaf
Overripe preferment or too much whole-grain rye → Shorten the preferment window (fold in the sponge near its peak) and balance with a share of fine-sifted rye flour.
