Schmaltz
שמאלץ · Rendered poultry fat, classically chicken, produced by slowly melting raw or roasted fat tissue over low heat until the connective tissues fully break down and the pure lipid separates from the crisped protein solids (gribenes). The premier frying and finishing fat of Ashkenazi and Central European Jewish cooking, prized for its high smoke point (190–200 °C), aromatic depth from lipid-soluble Maillard compounds, and the savory, mineral quality it imparts to starches and grains.

The formula
1 kg raw chicken fat tissue → ~700–800 g Schmaltz + ~100–150 g Gribenes (crisp cracklings)
The fat tissue may be rendered dry (no added liquid) for a pale, mild-flavored schmaltz, or with a small amount of water (wet rendering) to aid gentle melting and prevent scorching. The water evaporates during rendering.
Identity
- Must be 100% poultry-derived fat — no pork, beef tallow, or vegetable oils
- No water should remain — rendered until fat sizzles quietly, not sputters
- The Gribenes (crisp cracklings) must be present as a natural byproduct, not discarded
- The fat must be clear, golden-amber, and liquid at room temperature above ~25 °C
- Smoke point must be achieved without burning — render stops before the fat smokes
Ingredients

Method
- 1Trim the raw chicken fat tissue of any large meat pieces or blood clots. Cut into 3–4 cm pieces.Clean fat tissue renders evenly. Blood and meat introduce moisture and off-flavors that cause sputtering.
- 2Place the fat in a heavy pot (cast iron or stainless steel). Add 2–3 tablespoons of cold water — just enough to coat the bottom.Water initially keeps the temperature near 100 °C, allowing the fat to melt slowly before the water boils off, preventing scorching of the protein-rich tissues.
- 3Set over medium-low heat (120–140 °C). Cook, stirring occasionally, for 20–30 minutes until the water has fully evaporated and the fat is flowing freely.Once water is gone the temperature rises to the render zone; slow heat denatures connective tissue (collagen) and releases lipid from adipocytes without burning the protein solids.
- 4If using onion or skin/bones, add them now. Continue cooking 10–20 minutes more, until the solids are deep golden-brown and crisp (Gribenes). The fat should be amber and fragrant.Maillard reactions between reducing sugars in onion and amino acids in the tissue create hundreds of aromatic compounds; the Gribenes must reach full crisping (internal temp ~175 °C) for optimum texture.
- 5Strain immediately through a fine-mesh sieve lined with cheesecloth into a clean, dry, heatproof glass or ceramic container. Do not press the solids.Pressing forces cloudy moisture and bitter protein particles into the fat, reducing clarity and smoke point. Cheesecloth traps the finest particulates.
- 6Allow to cool uncovered until solidified. Seal and refrigerate.Uncovered cooling prevents condensation from dripping back into the fat. Refrigeration slows oxidative rancidity.
Techniques that matter
Dry Rendering
Melting fat tissue without added fat — the classical method. Low and slow prevents scorching of the collagenous matrix.
Wet Rendering (with water)
Water acts as a heat buffer, protecting fat from direct scorching during the initial melt phase. Evaporates completely before fat reaches smoke point.
Clarification
Straining removes all protein and water particles that would otherwise lower the smoke point and cause spoilage.
Gribenes Production
The controlled browning of the protein solids (collagen + myoglobin) at the fat–air interface creates the aromatic cracklings; this is a simultaneous Maillard and caramelization process.
Variations & derivatives
GriebenschmalzGermany / Ashkenazi Jewish
Schmaltz rendered with deeply browned onion and Gribenes together, cooled to a spreadable paste. Salted and peppered. The classic Yiddish deli spread on rye bread.
Sman'sIraqi Jewish (Mizrahi)
Rendered sheep tail fat (alyah), a different species and fat depot entirely. Not interchangeable, but analogous technique.
Drippings (poultry)Anglo-American
The fat collected from roasting a whole chicken — a wet render by definition. Darker, more complex, but contains more moisture than proper schmaltz. Used for roasting potatoes and gravy.
Goose Fat (Schmalz)German / Alsace
Rendered from raw goose fat tissue. Higher proportion of unsaturated fat (~70%) than chicken; richer, more buttery flavor. Classic for roasting potatoes and confitting.

Substitutions
- Schmaltz → Duck fat — Similar high smoke point and aromatic depth; duck fat is richer and has more gamey character. Safe for frying and finishing.
- Schmaltz → Lard (leaf fat) — Pork fat has a different fatty acid profile (more saturated) and mild porky flavor. Acceptable for frying; unsuitable for Jewish dietary law.
- Schmaltz → Neutral vegetable oil — Ghee or refined sunflower oil provide smoke-point stability but zero aromatic complexity. Functional substitute for frying only.changes result
Troubleshooting
Fat is cloudy or milky after cooling
Water was not fully driven off during rendering; residual moisture condensed and emulsified into the fat. → Re-render over low heat for 5–10 minutes with a pinch of salt, then strain again through cheesecloth.
Gribenes are tough and rubbery, not crisp
Render temperature too high or too low — too high burns the exterior before interior moisture escapes; too low never achieves the Maillard temperature (~150–175 °C). → Maintain consistent medium-low heat; the solids should sizzle actively but not blacken. Remove from heat the moment they are deep golden-brown.
Fat smokes and turns dark brown during rendering
Heat too high after water evaporated; protein tissues are directly scorching on the bare pan surface. → Immediately remove from heat, allow to settle for 30 seconds, then strain. Discard any burnt solids. Next batch: reduce heat by one increment.
Rancid odor and taste within weeks of refrigeration
Insufficient straining left blood and protein particles that catalyze oxidative rancidity. Also caused by exposure to light or warm storage. → Store in an opaque, airtight container, fully submerged. Add a small pinch of salt. Use within 3 months refrigerated, or freeze for up to 6 months.
