tangzhong
烫种 · A pre-cooked flour paste made by heating a mixture of flour and liquid to approximately 65°C (149°F), causing rapid starch gelatinization. The resulting thick, glossy paste is incorporated into bread dough to dramatically improve moisture retention, crumb softness, and shelf life. The technique bridges Eastern Asian and classical French bread-making principles.

The formula
1 part flour : 5 parts liquid by weight (e.g., 25 g flour + 125 g liquid → ~150 g paste)

The mixture thickens rapidly as starch swells; constant scraping of the pan bottom prevents a scorched layer while maintaining uniform viscosity throughout.
Variations & derivatives
Milk tangzhongUniversal
Replace water with scalded or scalded-and-cooled whole milk. Adds Maillard-reactive lactose and casein proteins for deeper browning and richer flavor. Most common in Japanese milk bread (shokupan).
Yōane (汤種)Japan
The original Japanese term. Traditional method sometimes uses just flour and hot water, cooked more loosely. The term literally means 'hot seed' or 'hot starter,' reflecting its role as a preliminary to the main dough.
Tangzhong with butterModern Chinese bakeries
Some recipes add a small amount of fat (5–10% of flour weight) to the tangzhong, creating a richer paste. Extends softness but is not classical.

Troubleshooting
Paste is too thick and gluey
Heated above 70°C; excessive starch gelatinization and the beginning of dextrinization → Use a thermometer; stop at 65°C. If too thick, it can still be used but may make dough overly stiff.
Lumpy paste despite mixing
Heat too high before whisking smooth; uneven heating creates cooked lumps → Always whisk flour and liquid smooth before applying heat; use medium-low flame.
Bread still stales quickly
Tangzhong ratio too low; less than 15% of flour weight used as tangzhong → Ensure tangzhong contains at least 15–20% of total flour; classic ratios run 20–30%.
Scorched bottom of paste
Insufficient stirring or heat too high; starch scorches easily at the pan surface → Use heavy-bottomed pan, medium-low heat, and scrape bottom and sides continuously.
