صلصة الثوم · A stiff, white, uncooked garlic emulsion sauce originating in the Levantine Arab kitchen. Raw garlic cloves are pounded or processed with a neutral vegetable oil and lemon juice (or sometimes just oil alone) until the mixture transforms from a gritty suspension into a smooth, light, pillowy sauce. Toum relies entirely on the natural emulsifying agents in fresh garlic — primarily saponins and garlic proteins — to bind oil and acid into a stable, pourable, intensely aromatic whole. It is a foundational condiment, not a finished dish, serving as a flavor base and finishing sauce for grilled meats and street foods across Lebanon, Palestine, Syria, and Jordan.

The formula
1 part garlic : 4–6 parts oil (by weight); 3–5% lemon juice by total weight; 1.5% salt
The 1:4–1:6 garlic-to-oil ratio is the reliable working range for a stable, pourable toum. Higher oil ratios (toward 1:8) produce a thinner, more restrained sauce; lower ratios (toward 1:3) yield a thicker, more pungent result but risk emulsion instability. The canonical Lebanese form uses the higher end of the garlic range for pronounced garlic character. Oil must be added very gradually, especially in the first half of addition, to prevent overwhelming the garlic's emulsifying capacity.

Method
- 1Prepare the garlic paste. Peel the garlic cloves, removing any green sprouts. Process to a smooth paste in a food processor or pound finely with salt in a mortar.A smooth, lump-free garlic base is essential for a smooth final emulsion. Any chunks will remain gritty and may destabilize the oil-in-water droplet structure.
- 2Add the lemon juice. With the machine running, pour in all the lemon juice before any oil is added. The mixture will remain a thick, rough paste.The acid activates the garlic's natural emulsifying proteins and saponins by lowering pH. Beginning with acid establishes the aqueous phase and begins unfolding garlic proteins so they are ready to interact with oil droplets as soon as they are introduced.
- 3Begin adding oil very slowly. With the processor running, add oil in an extremely thin, continuous stream — drizzle, do not pour. Start with approximately one-quarter of the total oil.The initial slow incorporation of oil allows the garlic's saponins and proteins to begin surrounding and stabilizing each oil droplet before the system becomes overloaded. Adding oil too quickly causes immediate coalescence and a broken sauce.
- 4Continue adding oil incrementally. Once the mixture has emulsified smoothly and begun to thicken, add the remaining oil in a very thin stream, pausing if the emulsion shows signs of stress.The second half of oil addition is the critical test. The sauce is most vulnerable to breaking here. Slow addition allows each oil droplet to be fully coated with emulsifier before the next arrives. The mixture should thicken progressively and reach a light, pillowy consistency.
- 5Evaluate and correct consistency. The finished toum should be thick, smooth, and hold its shape briefly when scooped. If too thick, pulse in a teaspoon of cold water or lemon juice. If too thin, it may still break on standing.Toum's final texture is a direct function of the garlic-to-oil ratio. Minor corrections with acid or water fine-tune consistency without destroying the emulsion. Oil-only thinning indicates the emulsion is already stressed.

Techniques that matter
Slow oil incorporation
The single most critical technique in toum-making. Oil must be added in a thin, continuous stream, never poured in one mass, because the garlic's natural emulsifiers (saponins and garlic proteins) can only stabilize a limited surface area of oil droplets at once. Overwhelming the system with oil causes coalescence and a broken, greasy sauce.
Garlic paste preparation
Raw garlic must be broken down to a completely smooth paste before oil is introduced. Any cellular walls left intact become grit in the finished sauce and interfere with droplet formation. In a mortar, this takes persistence; in a food processor, a minute or two of pureeing with salt is sufficient.
Acid as emulsion stabilizer
Lemon juice serves as more than a flavor agent. Its citric acid lowers the pH of the aqueous garlic phase, which unfolds garlic proteins and activates saponins — the primary natural surfactants in toum. This is why lemon juice is present in the canonical form but not in the stripped, oil-only traditional version.
Maintaining cold temperature
Heat accelerates coalescence of oil droplets in any emulsion. Keeping the garlic, oil, and bowl cold (or using ice water in large batches) extends the window of emulsification and produces a lighter, more stable toum with better volume.

Toum bel-limon (classic Lebanese)Lebanon
The standard form: garlic, oil, lemon juice, salt. The lemon juice version produces a brighter, more stable sauce and is the most common commercial preparation.
Toum bel-toum (garlic-only, no lemon)Syria / traditional rural Lebanon
Made with only garlic, oil, and salt — no added acid. The result is more purely garlicky, slightly less stable (shorter shelf life), and thicker. The traditional preparation before citrus became universally available.
Toum with egg yolkPalestine
Adding one or two egg yolks per 100 g garlic increases stability dramatically and yields a richer, more mayo-like toum. This variant bridges toum toward aioli in technique.
SkordaliaGreece
A garlic-potato or bread-based sauce thickened without oil emulsification. Shares the raw garlic flavor profile but is mechanically a starch-thickened sauce, not an emulsion. A related but distinct concept.
AioliProvence / Catalonia
A garlicky oil emulsion that uses egg yolk as the primary emulsifier, unlike toum which relies on garlic alone. The two are often confused in non-specialist literature but differ fundamentally in their emulsification chemistry.

Troubleshooting
Emulsion breaks mid-processing — sauce turns greasy and separates
Oil added too rapidly, overwhelming the garlic's emulsifying capacity. Also caused by adding all oil before any lemon juice in some formulations. → If caught early: stop adding oil, transfer to a tall container, and use an immersion blender to re-emulsify while slowly drizzling in the remaining oil. If too far gone: start with a fresh garlic paste in a clean bowl and add the broken sauce as if it were oil — fresh garlic emulsifier is available to stabilize it.
Toum is thin and pourable but separates within hours
Insufficient garlic relative to oil (ratio exceeded 1:6 without egg yolk support); garlic was too old or had degraded saponin content; oil was too warm. → Reblend with additional fresh garlic paste (start with 10–20% more garlic by weight, blended in), then re-emulsify with a slow oil drizzle to reach the correct ratio. Refrigerate immediately.
Final texture is gritty or contains visible garlic pieces
Garlic was not sufficiently processed to a smooth paste before oil was added; dried-out or old garlic cells not fully ruptured. → Pass finished toum through a fine-mesh sieve, pressing with a spatula, then re-process briefly. For future batches: ensure 2–3 full minutes of garlic-only processing before the first drop of oil.
Toum turns greenish or bitter after a few days
Oxidation of allicin breakdown products; natural chlorophyll from garlic's trace green tissue; or garlic used had developed significant sprouts. → Use very fresh garlic and store with plastic wrap pressed directly on the surface. If bitter: blend in a small amount of fresh lemon juice to re-balance. The green color from garlic sprouts is cosmetic, not harmful, but indicates suboptimal garlic selection.
