Bain-Marie

A method of cooking or holding food in a container set over or in hot water, using indirect heat to maintain gentle, even temperatures and prevent scorching or curdling.

Definition
A bain-marie is both a technique and a piece of equipment: a vessel containing hot water in which a second vessel holding food is placed, so that the food is cooked, melted, or held by the water's temperature rather than by direct flame or element. The surrounding water acts as a thermal buffer, capping the maximum temperature the food surface can reach at approximately 100 °C (212 °F) — and in practice, well below that when the water is kept at a gentle simmer. This controlled ceiling is the method's key utility. Egg-based preparations — custards, crème brûlée, crème caramel, hollandaise, sabayon, lemon curd — curdle or scramble quickly above about 82–85 °C; a bain-marie holds them in a stable range where proteins set smoothly. Terrines and pâtés in a bain-marie in the oven cook by moist, even heat that prevents the exterior from drying or cracking before the center sets. Chocolate melted over a bain-marie avoids the scorching that direct heat causes in even a second of inattention. In professional kitchens, bain-marie also refers to the steam table — a trough of hot water holding hotel pans of prepared food at service temperature. The stovetop double boiler is the domestic version: a saucepan of simmering water with a heatproof bowl resting on top, the bowl's bottom not touching the water surface. For oven applications, the dish is placed in a roasting pan half-filled with boiling water before being slid into the oven. Water-bath cooking of sous-vide pouches shares the bain-marie logic of temperature-buffered indirect heat, though it operates at precision-controlled sub-simmering temperatures the classic technique never specified.

The alchemical origin
Maria the Jewess (also called Mary the Prophetess) described the kerotakis and tribikos, vessels for gentle indirect heating of substances in early Greco-Egyptian alchemy. Medieval Latin alchemical texts called the method balneum Mariae — Mary's bath — and it passed into culinary use via the same slow-heat logic: sustaining reactions at stable, moderate temperatures that direct fire would overshoot.
Oven versus stovetop
In the oven, a bain-marie surrounds the dish with moist heat from all sides, preventing the surface crust that dry oven heat causes on custards. On the stovetop, the bowl or pan sits above the water level, with only steam contacting it — the temperature is slightly lower and the gradient gentler, making it the preferred environment for sauces that require constant agitation, like hollandaise or sabayon.
Professional usage: the steam table
In a production kitchen, the 'bain-marie' often means the bank of rectangular hotel pans sitting in a heated water trough at the pass. This holding function — keeping cooked food at 60–70 °C without further cooking — is the commercial application of the same thermal-buffer principle, preventing the service line from scorching or drying out sauces, soups, and sides during service.
