Definition

Baker's percentage — also called baker's math — is the standard notation system for professional bread and pastry formulas. Unlike culinary ratios or nutritional percentages, baker's percentage does not reference total dough weight; instead, the total flour in the recipe is always set to 100%, and every other ingredient is expressed as a percentage of that flour weight. If a formula calls for 1000 g flour, 750 g water, 20 g salt, and 3 g instant yeast, the baker's percentages are: flour 100%, water 75%, salt 2%, yeast 0.3%. Because flour is the anchor, the percentages remain constant as the batch size changes, and a baker can scale from a 2-kilogram test batch to a 200-kilogram production run by simply multiplying the flour weight and applying the same percentages. The system also allows bakers to compare formulas at a glance without knowing batch sizes: two sourdough formulas with 78% hydration, 2% salt, and 20% levain are structurally equivalent regardless of their absolute weights. When a formula uses multiple flours — for example, 70% bread flour and 30% whole wheat — all are summed to reach the 100% anchor. Pre-fermented flour (the flour baked into a poolish or levain used in the formula) is counted both in its preferment and in the total flour weight to maintain the percentage integrity. Baker's percentage is the lingua franca of professional bread baking worldwide.

Why percentages can exceed 100%

Because flour is the anchor at 100%, and every other ingredient is expressed relative to flour weight, the total of all percentages in a formula will always exceed 100%. A brioche formula might list flour 100%, butter 60%, eggs 50%, milk 20%, sugar 12%, salt 2% — summing to 244%. This is not an error; it is a feature of the system, signaling a highly enriched dough.

Pre-fermented flour percentage

Formulas using a preferment often note the 'pre-fermented flour' percentage — the fraction of total formula flour that was fermented in the starter, poolish, or levain before the final mix. A 20% pre-fermented flour level means one-fifth of the total flour was aged in the preferment, a useful parameter for controlling flavor and fermentation speed without changing overall hydration or salt level.

Converting to baker's percentage from a recipe

Divide the weight of each ingredient by the total flour weight and multiply by 100. If a recipe calls for multiple flours, sum them first to establish the 100% anchor, then convert all others. Water from eggs, milk, or other wet ingredients is sometimes excluded from the water percentage but can be factored in if the baker wants to track 'effective hydration.'
