Poolish

A liquid preferment made at 100% hydration (equal weights flour and water) with a tiny quantity of commercial yeast, fermented 8–16 hours to develop flavor enzymes and a creamy, open crumb in the finished bread.

Definition

Poolish is a wet, batter-like preferment of Polish origin (the name is the French adaptation of 'Polish') developed in 19th-century Vienna and popularized in France, where it became the foundation of the modern baguette de tradition. It is made by combining equal weights of flour and water (100% hydration) with a very small amount of commercial yeast — typically 0.1–0.3% of the flour weight for an overnight ferment at room temperature, or up to 1% for a faster 2–4 hour build — and allowing it to ripen until the surface shows active bubbling and the mixture has peaked and just begun to fall back (a tell-tale concave center). The low yeast percentage is deliberate: it forces a slow, proteolytic fermentation that generates protease enzyme activity, breaking gluten bonds gently and making the final dough more extensible and easier to handle. The acidity accumulated in poolish is predominantly lactic, producing a mild, creamy, almost yogurtic tang rather than the sharp acetic bite of a retarded sourdough. In the final bread, poolish contributes: an open, irregular crumb with thin cell walls; a golden, blistered crust with superior caramelization due to residual sugars; improved shelf life compared with straight-dough breads; and a wheaty-sweet aroma with subtle ferment notes. Poolish is deployed at percentages of 20–60% of the total flour weight, with 30–40% being the artisan baguette standard. Beyond baguettes, poolish is used in ciabatta, many styles of pizza dough, focaccia, and some pain de campagne formulas. It is distinct from biga (which uses 50–60% water and creates a stiffer, more acidic preferment) and from levain (which is wild-culture-driven).

In use

The baker mixed a poolish the evening before — 300 g flour, 300 g water, and a quarter teaspoon of yeast — and by morning it had peaked and started to sink, exactly what he was looking for before folding it into the baguette dough.

Reading poolish ripeness

The surface of a ripe poolish will be covered in irregular bubbles and may have a slight domed or flat top; the key visual cue is the center just beginning to dimple or fall — this is when proteolytic activity has peaked and yeast populations are at their prime. Using underripe poolish yields a bland, dense final crumb; overripe poolish has lost too much yeast vigor and excess acidity will weaken the gluten network in the final dough. Smell is a secondary cue: ripe poolish smells of ripe fruit, slightly sour but still sweet.

Poolish vs. biga

The practical difference: poolish is pourable (it can be scooped but not kneaded), biga is stiff enough to knead. Poolish's higher water content accelerates enzyme activity and produces a milder, creamier flavor; biga's lower hydration slows fermentation, generates more acetic acid, and produces a chewy, more tightly structured crumb. Italian bakers tend toward biga for pizza and certain regional breads; French bakers overwhelmingly use poolish for baguettes.

Yeast quantity and timing trade-off

Because commercial yeast quantity is inversely proportional to fermentation time, the baker controls ripening by adjusting yeast dosage: 0.05–0.1% for a 16-hour room-temperature ferment, 0.5–1% for a 4-hour same-day preferment, and up to 1.5% if circumstances demand a 2-hour rush build (though flavor development suffers accordingly). Temperature also matters; a poolish in a cold (18 °C / 64 °F) kitchen will need proportionally more yeast or more time than one fermenting in a warm (26 °C / 79 °F) bakery.
