Biga

A stiff Italian preferment mixed at 50–60% hydration and fermented overnight to develop structure, complex flavor, and chew.

Definition
Biga is a firm, barely hydrated preferment central to many classic Italian breads and some pizzas. It is mixed from flour, water (50–60% of the flour weight), and a small quantity of commercial yeast — typically 0.2–1% — then left to ferment at cool room temperature (16–18°C / 60–65°F) for 12–18 hours, or at lower temperatures for longer. The low hydration and cool environment slow fermentation dramatically, encouraging a long, complex development of organic acids, esters, and carbon dioxide without the yeast population exhausting itself. The resulting biga is stiff, slightly domed, and riddled with internal gas channels. When incorporated into a final dough it contributes pronounced open crumb structure, a wheaty-sweet depth of flavor, superior crust color, and markedly improved keeping quality. Hydration percentages below 50% produce what bakers call a 'very stiff' biga, used for breads like Altamura-style loaves; percentages creeping toward 65% tip the preferment into poolish territory. Standard biga uses 20–40% of the total flour weight. Ciabatta, Pugliese, many panettone formulas, and Roman-style pizza in teglia all rely on biga as a foundational building block.

Biga vs. Poolish
Both are pre-ferments using commercial yeast, but poolish is a liquid preferment (100% hydration, equal weights flour and water) while biga sits at 50–60%. The lower moisture of biga slows enzyme and yeast activity more aggressively, producing a stiffer, more elastic texture with a stronger wheat-forward flavor and less pronounced sour tang compared to poolish.
Temperature control
Biga is temperature-sensitive: above 21°C (70°F) the yeast can exhaust the available sugars before the longer fermentation window is complete, yielding a collapsed, over-fermented mass. Serious bakeries ferment biga in a dedicated cool room or a refrigerator set to 4°C for 16–24 hours, using slightly more yeast to compensate for the slower rate.
