Poke Test

A tactile assessment in which a floured finger is pressed into proofed dough and the speed of rebound indicates whether the dough is under-, over-, or correctly proofed.

Definition

The poke test is the bread baker's primary hands-on tool for judging final proof (bulk fermentation may also be assessed with a modified version). To perform it, lightly flour one finger and press it about 1–2 cm into the dough's surface, then observe how quickly the indentation fills back in. A dough that snaps back almost instantly is underproofed — the gluten network is still tight and the yeast has not produced sufficient gas to relax it. A dough that springs back slowly but still returns roughly halfway within 2–3 seconds is correctly proofed: the gluten is relaxed and extensible, and the gas cells are developed enough to support oven spring without collapsing. A dough whose indentation barely moves, or sinks further, is overproofed — the gluten structure has been weakened by over-fermentation and the gas cells are fragile. Temperature, hydration, flour protein content, and the ratio of pre-ferment all affect rebound speed, so bakers interpret results in combination with aroma, volume increase, and visual surface texture. The test does not work well on very stiff doughs (below about 65 % hydration) because the firm gluten masks fermentation state; in those cases, visual doming and aroma become primary cues.

Interpreting the rebound

A useful mental model: think of the dough as a coiled spring. Underproofed dough is a stiff, fully compressed spring — it wants to snap back. Properly proofed dough is a spring loosened by gas pressure and enzymatic relaxation — it rebounds gently. Overproofed dough is a spring that has lost its temper — it no longer rebounds at all. The 2–3 second window for correct proof is a guideline, not a fixed rule; cooler doughs move more slowly and warmer doughs more quickly, so bakers adjust expectations based on ambient conditions.

Variation for bulk fermentation

Some bakers also use a version of the poke test mid-bulk to check fermentation progress, though the cleaner signal at bulk stage is a 50–75 % volume increase combined with a domed, slightly domed surface and a noticeably sour aroma (for sourdough). The poke test becomes most diagnostic at final proof, when the shaped loaf is proofing in its banneton or tin.
