Poach / Pocher

Cooking food submerged in liquid held well below a boil — typically 71–85 °C (160–185 °F) — so it cooks gently without agitation, preserving moisture, structure, and delicate flavor.

Definition
Poaching is a moist-heat technique in which food is cooked in a liquid — water, court-bouillon, stock, milk, wine, oil, or syrup — maintained at a temperature where bubbles barely break the surface or do not appear at all. Classical French cuisine distinguishes three temperature bands: frémissement (a tremble, 71–80 °C / 160–176 °F) for the most delicate proteins; petit frémissement (a light simmer, 80–85 °C / 176–185 °F) for eggs and firm fish; and, informally, any temperature far below the 100 °C (212 °F) full boil. The defining characteristic is the absence of vigorous agitation: turbulence tears apart delicate proteins — an egg white poached at a rolling boil shreds; the same egg in a still 82 °C bath sets in a glossy, cohesive mass. There are two primary variants. Deep poaching (full submersion) is used for whole fish, salmon fillets, chicken breasts, and pears, where the liquid is the primary cooking medium and also a flavor source. Shallow poaching (cuisson) partially submerges thinner fillets or scallops in a small amount of aromatic liquid in a covered, buttered pan; the steam above and the liquid below cook simultaneously, and the reduced cooking liquid becomes the base for a velouté or beurre blanc sauce. The poaching medium is always chosen to complement the food: court-bouillon (water, wine, vegetables, herbs) for fish; lightly salted water or stock for chicken; sweetened wine or syrup for fruit. Poaching in fat — confit, huile d'olive, or oil poaching — is a related but distinct technique that shares the low-temperature principle but uses fat as the medium, producing extraordinarily moist, silky results for salmon, tuna, or egg yolk.

Temperature control is everything
The difference between a perfectly poached egg (set white, runny yolk) and a rubbery one is often 5–8 °C. A thermometer is not pedantry in poaching — it is precision. Many home recipes say 'gentle simmer' but mean frémissement; the language is imprecise where the technique demands exactness.
Shallow poach and the sauce connection
In classical French technique, the shallow poach (cuisson à court mouillement) is notable because the protein and its sauce are cooked together. The fish rests on a bed of shallots in a buttered sautoir, covered with fish stock and dry white wine to a depth of one-third the fillet's thickness. The lid traps steam. The cuisson is then reduced, cream or butter mounted in, and the sauce served beneath the same fish — nothing wasted.
Oil and fat poaching
Poaching in olive oil at 55–70 °C produces textures impossible in water: salmon becomes almost custard-like, tuna resembles fine canned conserva, egg yolks set to a flowing gel. Fat transfers heat more evenly than water at the same temperature, and the oil imparts richness without frying (which would require temperatures above 150 °C).
Sous vide relationship
Sous vide cooking is, in essence, a precisely controlled form of poaching: food sealed in a bag is held at a fixed water-bath temperature, eliminating both the guesswork of stovetop monitoring and any moisture loss to the cooking liquid. The technique emerged from the same scientific thinking that identifies 55–85 °C as the ideal window for delicate proteins.
