A long, thin yeasted French wheat loaf distinguished by its crackling, blistered crust, open and irregular crumb, and flavor developed through a slow, cool fermentation.

Technique
- Autolyse
- Hydrates flour fully before yeast and salt are added, developing gluten passively for extensible dough without over-mixing; skipping it produces a tight, less open crumb
- Slow cold fermentation (retard)
- Extended cool proofing (4–18 h at 4–6 °C) builds the complex, slightly acidic flavor absent in fast-risen baguettes; warm fast-rise produces bland bread
- Shaping by hand (boulage then façonnage)
- Degassing then tensioning the dough into an even cylinder with tapered ends; poor shaping collapses the tunnel structure or produces uneven scoring
- Steam injection during initial bake
- Steam keeps the crust surface extensible so the loaf springs fully and the scored grignes open; without steam the crust sets too early and the crumb stays dense
- Scoring (lamé or blade, oblique 30–45°)
- Directed cuts control where CO₂ escapes and the crust blooms; straight or shallow cuts cause blow-outs and suppress oven spring
- Two-stage baking (steam then dry heat)
- Steam phase sets crumb structure and volume; dry heat phase drives Maillard reaction for the mahogany crust — omitting the dry phase yields a pale, soft crust

Common mistakes
- Under-fermenting: rushing bulk fermentation or proof in a warm oven produces bland, tight-crumbed bread with no depth of flavor
- Over-hydrating without skill: chasing 80%+ hydration without proper gluten development collapses the structure during shaping
- Skipping steam: baking in a dry oven sets the crust before oven spring, producing dense bread with no open grignes
- Shallow or perpendicular scoring: cuts must be held at ~30–45° to the loaf axis to promote proper ear (oreille) lift; vertical cuts cause blow-outs
- Using bread flour: high-protein flour produces a chewy, bready interior alien to the characteristic gossamer crumb
- Serving cold or next-day without refreshing: refrigeration accelerates staling; day-old baguettes should be refreshed at 180 °C for 5 minutes, not served cold
- Adding fat or sugar 'for moisture': these change the dough class entirely — a fat or enriched loaf is a different bread
Provenance
The baguette emerged in Paris in the late 19th and early 20th century, shaped by two converging factors: the arrival of Viennese steam-deck ovens that enabled a crackling crust, and a 1919 French labor law prohibiting bakers from working before 4 a.m., pushing them toward faster-fermenting, elongated loaves easier to bake quickly in the morning. The form was standardized culturally through the 20th century and received legal definition in France's 1993 Décret Pain. UNESCO recognized the baguette tradition as Intangible Cultural Heritage in 2022.
