Biga

Biga · A stiff, low-hydration preferment from the Italian breadmaking tradition. Unlike the fluid poolish, biga is a firm dough-like pre-ferment typically yielding a crumb that is more structured, with a refined, subtle fermentation character and superior keeping quality.

The formula

1000 g flour : 550–600 g water : 5–7 g fresh yeast (55–60% hydration, 0.5–0.7% yeast on flour weight)

Adjust hydration downward for a stiffer biga (50%) used in panettone; upward for a more extensible dough. Biga is always stiffer than poolish (70–80% hydration).

Method

Troubleshooting

Biga collapsed or turned gray and liquid during cold fermentation

Fermentation temperature too warm, or yeast quantity too high, causing over-fermentation and acetic acid production.Reduce yeast to 0.3–0.5% of flour weight. Ensure refrigerator temperature is 4–6 °C. Use a tighter container to prevent surface drying.

Biga did not rise or show activity after 24 h refrigeration
