Biga
Biga · A stiff, low-hydration preferment from the Italian breadmaking tradition. Unlike the fluid poolish, biga is a firm dough-like pre-ferment typically yielding a crumb that is more structured, with a refined, subtle fermentation character and superior keeping quality.

The formula
1000 g flour : 550–600 g water : 5–7 g fresh yeast (55–60% hydration, 0.5–0.7% yeast on flour weight)
Adjust hydration downward for a stiffer biga (50%) used in panettone; upward for a more extensible dough. Biga is always stiffer than poolish (70–80% hydration).

Method
- 1Combine flour and water in a bowl or stand mixer. Mix until no dry flour remains; knead briefly into a smooth, stiff dough.Even hydration ensures uniform fermentation. The stiff texture develops gluten without extensive kneading.
- 2Add yeast (and salt, if using). Incorporate thoroughly until evenly distributed.Uniform yeast distribution prevents hot spots that cause uneven fermentation.

Autolysis (pre-fermentation rest)
Resting the flour-water mixture before adding yeast allows limited gluten development, improving extensibility and final crumb structure.
Temperature-controlled fermentation
Biga relies on time-temperature balance rather than yeast quantity. A 12 °C difference can double or halve fermentation rate, making consistency critical.

Biga per panettoneLombardy
Stiffer (50% hydration), longer fermentation (up to 48 h), often with 10–20% of total flour. Produces the characteristic honeycomb crumb and intense flavor of traditional panettone.
Biga per ciabattaVeneto/Emilia-Romagna
Slightly higher hydration (60–65%), incorporated at 20–30% of total flour. Contributes the open, alveolar crumb characteristic of ciabatta.
Biga madreItalian commercial baking
A matured, stiff preferment maintained as a permanent starter culture, refreshed daily or weekly like a poolish madre.

Troubleshooting
Biga collapsed or turned gray and liquid during cold fermentation
Fermentation temperature too warm, or yeast quantity too high, causing over-fermentation and acetic acid production. → Reduce yeast to 0.3–0.5% of flour weight. Ensure refrigerator temperature is 4–6 °C. Use a tighter container to prevent surface drying.
Biga did not rise or show activity after 24 h refrigeration
Yeast too old or dead, flour too cold (inhibiting yeast), or fermentation too short. → Check yeast viability before mixing. Allow 1–2 hours at room temperature after removing from fridge before evaluating. Extend cold fermentation to 36–48 h.
Final bread has closed, dense crumb despite using biga
Biga incorporated when too cold (shocking the yeast), or final dough over-proofed, or insufficient mixing after adding biga. → Always temper the biga 1–2 hours before use. Ensure final dough is mixed until biga is fully incorporated. Watch proofing time closely.
