Definition
Desired Dough Temperature (DDT) is the temperature at which a fully mixed bread dough should arrive, chosen to ensure that fermentation begins at a controlled and repeatable rate. Yeast activity, enzymatic action, and bacterial fermentation in sourdough all accelerate exponentially with rising temperature: a dough at 78°F (26°C) will ferment considerably faster than one at 68°F (20°C), and timing errors compound across bulk fermentation and proof. By specifying a DDT in the formula — typically 75–78°F (24–26°C) for most lean breads, lower for long cold-proof formulas — bakers can back-calculate the required water temperature before mixing. The most common calculation uses the 'factor of three' method for straight doughs: DDT × 3 − (room temperature + flour temperature + friction factor) = water temperature. The friction factor accounts for heat generated by the mixer motor transferred into the dough, typically 20–30°F for a high-speed spiral mixer and 0°F for gentle hand mixing. Professional bakers measure dough temperature at the end of every mix with an instant-read thermometer and record it as a quality-control checkpoint. Missing DDT by even a few degrees shifts bulk fermentation timing by 20–40 minutes, which cascades into scheduling problems for a production bakery. Home bakers can use the same calculation to decide whether to use cold water from the tap, water that has been refrigerated, or — in cold kitchens — slightly warm water.

The factor-of-three calculation
For a straight dough: Water Temp = (DDT × 3) − Room Temp − Flour Temp − Friction Factor. For a dough with a preferment (poolish, levain), a factor of four is used: the preferment temperature is added as a fourth variable. Always measure flour and room temperatures on the day of baking, not the day before, as they can shift meaningfully overnight.
Sourdough considerations
Sourdough formulas are more sensitive to DDT because the balance of acetic and lactic acid bacteria shifts with temperature: cooler fermentation favors acetic acid (sour, tangy) while warmer fermentation favors lactic acid (milder, yogurt-like). Many bakers deliberately target a lower DDT — 72–74°F — when they want a more complex, acidic crumb from their levain.
