Dashi

Japan's foundational umami stock, extracted from kombu seaweed and katsuobushi dried tuna flakes via gentle infusion rather than long simmering.

/DAH-shee/Japanese: 出汁, from 'dasu' (to extract/emit) + 'shiru' (liquid/juice). The technique dates to at least the Muromachi period (14th–16th centuries), when kombu from Hokkaido became reliably available via coastal trade routes.

Definition

Dashi is the cornerstone stock of Japanese cuisine, providing the savory, mineral backdrop — the umami foundation — upon which most washoku dishes are built. Unlike Western stocks that extract collagen and fat through prolonged boiling, dashi is made by cold or warm infusion, extracting glutamates and inosinates without turbidity or bitterness. The most common form, ichiban dashi (first dashi), steeps kombu (dried kelp, rich in glutamic acid) in water brought to just below a simmer (around 60–65°C / 140–149°F), then the kombu is removed and katsuobushi (smoked and fermented dried skipjack tuna shavings) is added off heat and allowed to steep for 3–5 minutes before straining. The synergy between kombu's glutamates and katsuobushi's inosinates produces a multiplicative umami effect — a phenomenon codified by Japanese chemist Kikunae Ikeda in 1908. Niban dashi (second dashi) reuses the spent kombu and katsuobushi with a longer, hotter steep, yielding a deeper but slightly more bitter stock suited to braised dishes and miso soup. Regional and dietary variants include: niboshi dashi (small dried sardines, more assertive and briny); shojin dashi (kombu plus dried shiitake, used in Buddhist temple cooking); and tori dashi (chicken, less traditional but increasingly used). Dashi degrades quickly — ichiban dashi is best used within hours; it loses its delicate aromas within a day even refrigerated. Instant dashi granules (dashi no moto) exist but deliver a blunter, saltier approximation.

In use

She brought the kombu water to 60°C, held it for ten minutes, then removed the kelp and added a handful of katsuobushi — the dashi was ready to strain in under five minutes.

Temperature is everything

The narrow window around 60°C is not arbitrary: at lower temperatures kombu releases too few glutamates; above 80°C it releases alginates that make the stock slimy and bitter. A probe thermometer is the most useful tool in dashi preparation.

Umami synergy

Kombu is rich in glutamic acid (a free amino acid); katsuobushi is rich in inosinic acid (a nucleotide). When combined in roughly a 1:1 flavor ratio, they exhibit synergistic umami — the perceived intensity is roughly eight times greater than either ingredient alone. This was the scientific foundation behind Kikunae Ikeda's 1908 identification of umami as a fifth taste.

Instant dashi (dashi no moto)

Granulated or powdered dashi concentrates are widely used in home and restaurant cooking. Most contain MSG, salt, and dried fish extract. They are convenient but higher in sodium and lack the clean, ephemeral aromatics of freshly made dashi. Some quality brands use actual katsuobushi powder with minimal additives.
