Cupping (Coffee)

A standardized, controlled sensory evaluation protocol used by coffee professionals to assess aroma, flavor, acidity, body, aftertaste, and overall quality across multiple samples simultaneously.

/KUP-ing/The practice developed in late 19th-century New York and San Francisco commodity markets, where green-coffee importers needed a rapid standardized method to evaluate sacks of beans. The SCA formalized the scoring protocol in the early 2000s.

Definition

Cupping is to specialty coffee what structured blind tasting is to wine: a disciplined, reproducible protocol that isolates coffee quality from brewing variables. The Specialty Coffee Association (SCA) codified the dominant industry standard, which proceeds as follows. Coarsely ground coffee — typically 8.25 g per 150 ml of water — is placed in identical cupping bowls; the dry grounds are first assessed for fragrance. Near-boiling water (approximately 93°C / 200°F) is poured over the grounds without agitation, and a crust of grounds forms on the surface. After four minutes, the taster leans in and breaks the crust with a spoon, inhaling the aromatic bloom released — the most critical moment for aroma evaluation. The grounds are then skimmed away and the liquid cooled to approximately 70°C before tasting begins. Tasters slurp the coffee loudly and sharply from a cupping spoon to atomize the liquid across the palate and retronasal cavity. Scores are assigned across ten SCA attributes: fragrance/aroma, flavor, aftertaste, acidity (quality and intensity), body, balance, uniformity, clean cup, sweetness, and an overall score — totaling 100 points. Coffees scoring above 80 qualify as specialty grade. Cupping is performed at origin by buyers and exporters, at roasteries for quality control, and competitively at events like the Cup of Excellence. It requires multiple comparative samples to be meaningful — typically at least five to eight cups evaluated side by side.

At the weekly cupping, the sourcing team detected a fermented, winey quality in the natural-processed Ethiopian that would appeal to buyers seeking fruit-forward profiles for their espresso blends.

Notes

The slurp

The loud slurping that characterizes cupping is not affectation. Aerating the liquid as it enters the mouth forces volatile aromatics up through the retronasal passage to the olfactory receptors, dramatically increasing the perceived flavor complexity compared with sipping. The technique mirrors the 'spit or slurp' of wine tasting: sensation, not decorum, is the goal.

Temperature and changing perception

Professionals cup at multiple temperature stages — typically evaluating from around 70°C down to below 40°C — because different compounds become perceptible as the liquid cools. Defects that are masked by heat become apparent at room temperature; sweetness and acidity shift in prominence. A coffee that seems balanced at 70°C but turns sour or hollow as it cools has a significant quality problem.

Cupping vs. brewing

The cupping method is not intended to replicate how the coffee will taste when brewed by the consumer. It is a controlled comparison tool. A coffee that scores well in a cupping will not necessarily perform identically in espresso, filter, or French press — each brewing method has different extraction dynamics and favors different roast and origin profiles.
