Beurrage

Definition
The beurrage is the block of butter worked to precise plasticity and formed into a flat square or envelope before being enclosed in the détrempe for lamination. It is the engine of feuilletage: as the dough is rolled and folded, the butter spreads in continuous, even sheets between dough layers, and those sheets flash to steam in the oven to produce lift and crispness. The critical variable is plasticity. Butter that is too cold (below about 10 °C) becomes rigid and shatters when rolled, punching through the dough and creating gaps rather than layers. Butter that is too warm (above about 18 °C) smears into the dough, fat migrating between gluten strands and collapsing lamination entirely. The target is a waxy, pliable state — approximately 13–15 °C — at which the butter bends without cracking and holds its shape without oozing. Professional pastry chefs beat cold butter between sheets of parchment with a rolling pin to work it to this state, then fold it into a neat square of consistent thickness, typically 1–1.5 cm, to match the rolled détrempe dimensions. Butter selection matters: high-fat European-style butters (82–84% butterfat, lower moisture content, sometimes labeled beurre de tourage or dry butter) are preferred because their reduced water content minimizes the risk of the beurrage becoming slippery at room temperature and their higher plasticity range makes lamination more forgiving. Cultured or AOC butters (Échiré, Beurre d'Isigny, Poitou-Charentes) add flavor complexity to the finished pastry.

Beurre de tourage vs. standard butter
Specialized lamination butter (beurre de tourage or beurre sec, sold in sheets at professional suppliers) typically has 84% butterfat and very low water activity. It has a wider plasticity range and a higher melting point than standard European butter, making it more tolerant of imperfect ambient temperatures. Standard unsalted European butter (82% butterfat) works well in cold kitchens; the marginal improvement of dry butter matters more in warm environments or high-volume professional settings.
Matching plasticity
The single most important rule of incorporating the beurrage: the butter and the détrempe should be at the same degree of firmness when the first roll begins. If one is significantly harder than the other, the harder component will break through the softer during rolling. A simple test: the beurrage should bend without snapping and leave no grease on the parchment when pressed at room temperature.
