A French pastry technique of layering dough and butter through repeated folding and rolling to produce hundreds of thin, flaky laminae.
/fuh-yuh-TAHZH/French, from feuille (leaf or sheet); the technique was codified in French haute pâtisserie from at least the 17th century, though earlier antecedents exist in Middle Eastern and Iberian layered pastries.
Definition
Feuilletage is the French art of laminated dough: a process of alternately layering a butter block (beurrage) within a base dough (détrempe) through a precise sequence of folds and rests called tours (turns). Each complete turn — either a letter fold (three layers) or a book fold (four layers) — multiplies the existing layer count. Six single turns yield 729 layers; a common croissant schedule of three double turns produces 64. During baking, moisture in the butter flashes to steam and forces the laminae apart, producing the dramatic lift and shattering crispness that define croissants, pains au chocolat, vol-au-vents, mille-feuille, and pithiviers. Success depends on four variables held in constant balance: gluten strength in the détrempe (enough to resist tearing but not so much it springs back), butter plasticity matching dough plasticity (both at approximately 13–15 °C), resting periods between turns to relax gluten and re-chill fat, and precise rolling pressure to avoid smearing fat into dough rather than layering it. Two main families exist: classic puff pastry (pâte feuilletée, no yeast, maximum layers ≈ 1,000–2,000) and yeast-leavened laminated doughs (pâte levée feuilletée, used for viennoiserie), where enzymatic activity during proofing adds a second lift mechanism alongside steam. Blitz or rough puff pastry shortcuts the process by incorporating cold butter pieces directly and folding fewer times, trading layering precision for speed.

Layer mathematics
Starting with 1 dough-butter interface, each letter fold (tour simple) multiplies layers by 3 and each book fold (tour double) multiplies by 4. For classic puff pastry using 6 single turns: 3^6 = 729 layers of dough and 729 of butter, typically cited as approximately 1,000 total laminae. Croissant dough using 3 double turns: 4^3 = 64 layers — far fewer, but yeast leavening compensates for the reduced steam lift.
Temperature is paramount
Butter that is too cold shatters and breaks the dough layers rather than rolling within them; butter that is too warm smears into the dough and obliterates lamination. Professional pastry kitchens keep the space at 18 °C or cooler and refrigerate the dough for 30–60 minutes between every two turns.
