The hot-water stretching and kneading step at the heart of pasta filata cheesemaking, in which acidified curd is worked at 75–90 °C until protein strands align into a smooth, elastic, fibrous mass.

Definition
Filatura (from Italian 'filare', to spin or draw into thread) names the specific mechanical operation within the pasta filata process: the moment when acidified curd is immersed in or contacted with hot water — typically at 75–90 °C — and manually or mechanically worked until it undergoes a dramatic phase change from crumbly granules into a cohesive, glossy, plastic mass. At the molecular level, heat partially denatures and lubricates the casein protein network (already de-mineralized by acid during fermentation to pH 5.1–5.3), allowing individual protein chains to slide past one another under mechanical shear. Repetitive stretching and folding aligns these chains into parallel bundles oriented along the pull axis; this is the source of the characteristic 'string' or 'fiber' texture visible when fresh mozzarella or quesillo is torn. Traditional filatura is performed with two wooden paddles (bastoni) or with the cheesemaker's hands: the curd mass is lifted out of the hot water, stretched to a long ribbon, folded back on itself, resubmerged to retain heat, and stretched again — typically four to six cycles — until the texture is uniformly smooth and no lumps or grain remain. Temperature maintenance is critical: if the curd cools below approximately 55–60 °C during working, it becomes stiff and will tear rather than stretch; if it is overheated, fat separates from the protein matrix (greasing out) and the cheese becomes oily and grainy. Once the filatura is complete, the cheese is shaped immediately — pulled into balls (trecce, nodini, bocconcini) or consolidated into a provolone-style form — then plunged into cold water or brine to set the shape and stop heat-driven reactions.

Hand vs. Machine Filatura
Traditional hand filatura is still practiced by artisan producers in Campania and Sicily, where the cheesemaker's hands serve as both thermometer and texture sensor — feeling for the moment the curd flows smoothly and the surface takes on a high gloss. Industrial filatura is performed by continuous horizontal screw-and-paddle stretching machines (filatrice) that can process thousands of kilograms per hour; these machines maintain water temperature precisely but cannot replicate the variable folding geometry of handwork, which some cheesemakers believe produces a more layered, complex fiber structure. PDO specifications for Mozzarella di Bufala Campana require manual or semi-manual filatura.
Water Temperature and Fat Content
The optimal stretching temperature varies with the fat content of the milk: buffalo milk mozzarella (7–8% fat) is typically worked at slightly lower water temperatures (75–80 °C) than cow milk mozzarella (3.5% fat, worked at 82–90 °C), because the higher fat content lowers the effective melting point of the protein-fat composite. Too high a temperature for a high-fat curd causes the butter-fat to separate and coat the surface of the stretching water with an oil slick — the cheesemaker's visual signal to reduce heat immediately.
Residual Stretch as Quality Indicator
Finished fresh mozzarella should retain noticeable stretch when torn, a property called 'filatura residua' by Italian producers. Mozzarella with good filatura residua pulls into long, thin strands rather than breaking off cleanly; this is valued in pizza mozzarella for its visible melt behavior. Loss of residual stretch in aged or poorly made mozzarella indicates over-acidification, over-working, or excessive moisture loss during the stretching process.
