Final Proof / Appretto

The last fermentation stage after shaping in which the loaf relaxes, expands, and develops the open structure it will carry into the oven.

Definition

The final proof (Italian: apprêt or appretto, from the French apprêt, meaning 'preparation') is the fermentation period that follows shaping and precedes baking. Where bulk fermentation builds flavor and gluten strength in the undivided mass, the final proof expands the shaped piece and establishes the crumb architecture of the finished loaf. After shaping, dough is placed seam-side up in a well-floured banneton (proofing basket), a cloth-lined bowl, or seam-side down in a pullman pan. The baker must balance three variables: sufficient gas production to achieve an open crumb, adequate gluten relaxation so the dough springs smoothly in the oven, and controlled starch gelatinization readiness. The canonical readiness test is the poke test (also called the finger dent test): press a floured finger about 1 cm into the dough surface. Properly proofed dough springs back slowly and only about halfway — indicating live gas production but controlled structure. Dough that springs back instantly is underproofed; dough that does not spring back (or collapses) is overproofed and has exhausted its yeast or lost gluten integrity. Timing for room-temperature final proof in sourdough typically runs 1–4 hours at 22–26 °C (72–79 °F), though most artisan bakers cold-retard their shaped loaves overnight, using the refrigerator to decouple scheduling from gas production. Commercial yeasted breads proof faster — often 45–90 minutes at controlled humidity. Enriched doughs (brioche, challah, pan de muerto) may take longer due to fat content slowing fermentation.

In use

After shaping, the boule went into the banneton for its final proof — after ninety minutes at room temperature the poke test showed a slow, partial spring-back, and the loaf went straight into the preheated Dutch oven.

The poke test in detail

Wet your finger lightly before poking to prevent sticking. Push straight down about 1 cm into a floured surface of the dough. A perfect proof shows the indentation springing back slowly to about half its original depth over 3–5 seconds. If it snaps back in under a second, the gluten is still tight — give it more time. If it barely moves or the surface deflates, the yeast is spent and you should bake immediately even if the loaf looks small. Overproofed dough baked late will have a gummy, dense crumb and little oven spring.

Room temperature vs. cold proof

Room-temperature final proof lets yeast run freely and generally produces a milder loaf. Cold proofing (retarding) slows fermentation dramatically — gas production nearly halts below 4 °C — so the loaf spends 8–16 hours in a holding pattern that allows enzymatic flavor development without overproofing. Cold dough also scores more cleanly, holds its shape better during the transfer to the oven, and enables baking straight from the fridge.
