Cold Retard

Placing shaped dough or bulk dough in the refrigerator to slow fermentation, extending flavor development and granting scheduling control over the baking timetable.

Definition

Cold retarding (or simply 'retarding') is the practice of halting or dramatically slowing fermentation by placing dough — either in bulk or post-shaping — into a refrigerator, typically between 2 °C and 5 °C (36–41 °F). At these temperatures yeast activity drops to near-zero, carbon dioxide production almost ceases, and gas is locked inside the gluten network rather than continuing to accumulate. The enzymatic and bacterial activity that builds flavor, however, continues at a reduced but meaningful pace: protease enzymes soften gluten gently (improving extensibility without weakening structure), amylase breaks starches into fermentable sugars, and lactic acid bacteria continue their slower acetic acid production, pushing the flavour profile toward a sharper, more complex tang compared with a fully room-temperature proof. Retarding can be applied at two distinct points. 'Bulk retard' (the less common approach) chills the entire dough mass after mixing; bakers with multiple doughs or long production sequences use this to synchronize timelines. 'Post-shape retard' — far more common in home and artisan contexts — places the shaped, banneton-rested loaf directly into the refrigerator for 8–16 hours or even up to 24 hours, then bakes it straight from cold. Benefits compound: cold dough scores more cleanly because the surface is firm, steam penetration during the initial bake period is more even, crust color often deepens due to the Maillard reactions occurring on a dough with higher residual sugars, and crumb openness frequently improves because a colder, stiffer dough holds its shape when transferred to a hot Dutch oven. Retard duration is bounded; beyond approximately 24–36 hours even at refrigerator temperatures, yeast exhaustion and excessive acid production can degrade the dough.

In use

She shaped the loaves at 9 p.m., tucked them into the fridge for a cold retard, and baked them straight from cold the next morning — the thick, blistered crust confirmed the overnight rest had done its work.

Baking straight from cold

A correctly retarded loaf can go directly from the refrigerator into a preheated Dutch oven — no acclimatization needed. The steep thermal gradient between cold dough and a 260 °C (500 °F) vessel actually aids oven spring: the outer crust sets more slowly, giving interior expansion longer to push outward before the crust locks. Some bakers do allow 20–30 minutes on the counter to take the chill off very cold kitchens, but this is a preference, not a requirement.

Flavor impact

The slow accumulation of acetic acid during a cold retard shifts tang noticeably. Bakers who want a more assertive, San Francisco–style sourness often extend the retard toward 16–20 hours. Those preferring a mild, milky tang keep the retard under 10 hours or use a younger, less acidic levain. Neither approach is more correct — they express different flavor intentions.

Container matters

The banneton or bowl should be covered airtight (a shower cap, plastic wrap, or a lidded proofing basket) to prevent the surface from drying and forming a hard skin. A skin blocks oven spring and prevents the score from opening properly. Light misting of the dough surface before covering adds an extra buffer.
