Cold-Smoking vs. Hot-Smoking

Two distinct approaches to applying smoke: cold-smoking flavors without cooking (below ~30 °C / 85 °F), while hot-smoking simultaneously cooks and flavors food at 65–135 °C (150–275 °F).

Definition

Smoking is the process of exposing food to the gases, aerosols, and particulates produced by smoldering wood. The two major regimes differ fundamentally in temperature and outcome. **Cold-smoking** maintains the smoke chamber below approximately 30 °C (85 °F) — well under the threshold at which proteins begin to denature and fat begins to render. At these temperatures the food is not cooked; instead, phenols, carbonyls, and organic acids from the smoke penetrate the surface and deposit antimicrobial compounds that retard spoilage and alter flavor. Classic cold-smoked products — Nova lox, traditional bacon (before cure-and-cook), European salami, cold-smoked cheese — rely heavily on prior salt-curing or fermentation to control the water activity enough to make the low-temperature soak safe. Cold-smoking alone is NOT a kill step for pathogens such as Listeria monocytogenes or Salmonella; regulatory food safety requires the combined hurdle of low aw, acid pH, or a subsequent cooking step. **Hot-smoking** operates at temperatures that simultaneously cook and flavor the food — typically 65–135 °C (150–275 °F) at the grate. At these temperatures collagen converts to gelatin, muscle fibers contract and firm, and the surface undergoes Maillard browning to form bark. American barbecue (brisket, pulled pork, ribs) is canonical hot-smoking: a long low-and-slow cook at 107–121 °C (225–250 °F) renders connective tissue and produces the characteristic smoke ring — a rosy myoglobin-nitrite reaction zone just under the bark. Hot-smoking is itself a pasteurization event when the internal temperature reaches the requisite safe-harbor level for the protein in question. The two methods can be combined: cold-smoke for penetration and flavor complexity, then hot-smoke or cook for food safety and texture. The pellicle — a tacky dried surface layer formed by resting uncured, salted protein uncovered before smoking — is critical in both regimes but especially in hot-smoking to promote smoke particle adhesion.

In use

The recipe calls for cold-smoking the salmon over alder for six hours at 20 °C before a light cure — a far cry from the hot-smoking technique used for Tennessee whole hog, where the pit holds 121 °C for fourteen hours.

Safety caveat for cold-smoking fish

Cold-smoked fish (lox, gravlax-style) is a notable Listeria risk category. Commercial producers are required to achieve either a 5-log reduction through combined hurdles or to label the product as 'not cooked.' Home cold-smokers should use previously frozen fish and keep the smoke chamber below 10 °C (50 °F) to limit microbial growth during the process.

The smoke ring

The pink or rosy band (2–10 mm deep) found beneath the bark of properly hot-smoked meat is caused by nitrogen dioxide and carbon monoxide from the smoke reacting with myoglobin in the muscle to form stable pigments — nitrosomyoglobin and carboxymyoglobin — that resist the graying caused by heat. It is a flavor-neutral aesthetic marker prized in competition barbecue.
