Pasta Filata

A family of Italian cheeses made from acidified curd that is immersed in hot water and stretched until it becomes plastic and fibrous, yielding smooth, elastic bodies from mozzarella to provolone.

Definition
Pasta filata (Italian: 'spun paste') denotes both a cheesemaking technique and the family of cheeses produced by it. The technique's defining step is thermomechanical stretching: acidified curd — typically brought to pH 5.1–5.3, the point at which calcium phosphate has sufficiently dissociated from the casein matrix to allow the protein network to flow under heat — is immersed in water at 75–90 °C (or worked in hot steam) and then kneaded, folded, and pulled until it becomes smooth, glossy, and fibrous. Below the target pH, the curd is too brittle and tears; above it, the curd is grainy and will not cohere. The heat plasticizes the partially de-mineralized casein network; the mechanical working aligns protein strands into parallel sheets oriented along the stretch axis, creating the characteristic fibrous texture visible when fresh mozzarella is torn. The family spans a wide range of moisture contents and aging styles: fresh mozzarella (fior di latte, buffalo milk burrata) at the wet end; provolone, caciocavallo, and ragusano as semi-aged to aged intermediates; and scamorza as a lightly smoked or fresh-dried form. Historically made by hand using wooden paddles and hot vat water in southern Italian dairies (particularly Campania and Sicily), the process is now largely mechanized but the underlying chemistry is unchanged. Outside Italy, pasta filata techniques underpin oaxacan quesillo in Mexico and similar pulled-curd cheeses in the Balkans and Turkey (tel peynir, string cheese).

Buffalo vs. Cow Milk
Mozzarella di Bufala Campana DOP must be made exclusively from Italian Mediterranean buffalo milk, which is higher in fat (7–8%), protein (4.5%), and dry matter than cow milk. The result is a richer, creamier, more ivory-toned cheese with a more pronounced milky tang and softer bite. Fior di latte is the equivalent made from cow milk and lacks PDO protection but is the everyday workhorse for pizza. The higher fat content of buffalo milk makes the pasta filata pull slightly more forgiving — the curd flows more easily — but also requires careful temperature control to avoid excessive fat release into the hot water (called 'greasing out').
pH Window Is Narrow
The stretchability window is roughly pH 5.0–5.4 — a range of only 0.4 units. Below 5.0 the curd is over-acidified and over-mineralized in the wrong direction; above 5.4 it is too firm and chalky to stretch. This means the cheesemaker must either time the fermentation to hit the window naturally, or — in the common shortcut for pizza mozzarella — use direct acidification with citric acid to hit the target pH instantly (the 'quick' or '30-minute mozzarella' method). Citric acid mozzarella stretches beautifully but lacks the flavor depth of culture-fermented versions.
Global Relatives
The pasta filata principle appears independently or by diffusion across multiple cheese cultures: Syrian/Lebanese Halloumi (grilled stretched curd), Armenian string cheese (tel banir), Georgian sulguni, and Mexican quesillo de Oaxaca (wound into a ball from a continuous ribbon). All exploit the same calcium-dissociation and protein-alignment chemistry, though the precise pH, temperature, and motion vary.
