Fermentolyse

A hybrid technique that combines autolyse and fermentation by incorporating starter (levain) during the rest period, accelerating both gluten development and flavor complexity.

Definition
Fermentolyse is a bread-baking technique that merges the principles of autolyse and sourdough fermentation into a single resting step. In a conventional workflow, autolyse is performed before starter and salt are added — flour and water rest together for 20–60 minutes, allowing gluten to hydrate and partially align without the structural disruption of mixing, and without the enzymatic activity of live culture. Fermentolyse departs from this by incorporating the levain (sourdough starter) along with flour and water at the outset, then resting the mixture before adding salt. This means fermentation begins immediately during the rest period, so the dough arrives at the mixing stage with both the extensible, relaxed gluten of a traditional autolyse and the early-stage flavor compounds produced by lactic and acetic acid bacteria. The advantages are threefold: gluten builds faster because the acids produced by the starter strengthen the protein network; organic acid production starts earlier, deepening the sour flavor profile; and the overall bulk fermentation time can be shortened without sacrificing complexity. The technique is particularly useful for high-hydration doughs and for bakers who want to compress a schedule without switching from sourdough to commercial yeast. The trade-off is reduced control — because fermentation is already underway, the dough can overproof faster if the baker is inattentive, and the salt must be added promptly at the end of the rest to slow the culture to a manageable pace.

When to choose fermentolyse over autolyse
A standard autolyse is appropriate when the baker wants maximum control over fermentation timing — particularly in warm kitchens or when using a vigorous young starter. Fermentolyse is better suited to cooler environments or to bakers who wish to extend flavor development without a proportionally longer total timeline. Because the technique front-loads acid production, it pairs well with whole-grain flours, which have more enzymatic activity and benefit from early acidification to manage protease degradation of the gluten network.
Salt timing
Salt is always withheld during both autolyse and fermentolyse because salt inhibits gluten hydration and slows fermentation. In fermentolyse, adding salt at the end of the rest period is especially critical: without it, the levain will continue to ferment aggressively during subsequent handling steps. Some bakers dissolve the salt in a few grams of reserved water from the formula before incorporating it, which ensures even distribution without excessive manipulation of the dough.
