The visual and tactile skills used to judge when a dough's bulk fermentation is complete, relying on volume rise, bubble pattern, jiggle, and the finger-poke test.
Definition
Bulk fermentation reading is the art of assessing a fermenting dough without relying solely on the clock. Because fermentation speed varies with ambient temperature, starter activity, flour hydration, and salt concentration, recipes that specify 'four to six hours' can be wrong by a factor of two in a cold kitchen or a hot one. Skilled bakers instead read a constellation of cues. Volume: the dough should have increased by roughly 50–75 percent for most sourdough loaves (75–100 percent for yeasted doughs); a clear straight-sided container with a rubber band or tape mark at the starting level is the best tool for tracking this. Surface dome: the top of the dough should be slightly domed and smooth, not flat or sunken — a sunken surface with a sharp smell of alcohol indicates overfermentation. Bubble pattern: small, even gas bubbles visible through the container wall or on the surface indicate active, healthy yeast activity; large irregular bubbles suggest overproofing and gluten breakdown. The jiggle test: when the container is gently shaken, a properly fermented dough should wobble in one cohesive, elastic mass like set jello — not slosh like batter. The poke test: a floured finger pressed 2 cm into the dough should leave an indent that slowly (over 3–5 seconds) springs back about halfway; immediate full spring-back means underfermented; indent that stays flat means overfermented. Taken together, these cues form a feedback loop that experienced bakers internalize through dozens of batches, eventually allowing them to time the bulk fermentation regardless of the season or kitchen conditions.

Temperature as the controlling variable
Dough temperature is the single most influential factor in bulk fermentation speed. A one-degree Celsius increase in dough temperature roughly halves the required bulk time at the margin. Many professional bakers target a final dough temperature (FDT) of 24–26 °C (75–79 °F) to land in a predictable window. The Desired Dough Temperature formula — DDT = (target FDT × 3) − room temperature − flour temperature — guides water temperature to hit the FDT consistently.
The container as diagnostic tool
A tall, clear, straight-sided container (a Cambro or a large mason jar) is among the most valuable tools for learning to read bulk fermentation. It reveals volume gain, bubble distribution, and the texture of the dough mass without distorting the read the way a wide bowl does. Marking the starting level with a rubber band or wax pencil gives an objective volume reference that eliminates guesswork.
